Celem pracy było ustalenie wpływu α-tokoferolu na zmniejszenie oksydacji naturalnych tłuszczów występujących w chałwie oraz przedłużenie okresu przydatności do spożycia chałwy. Materiał do badań stanowiły próbki chałwy waniliowej o różnych zawartościach α-tokoferolu przechowywane w temp. 10°C i wilgotności względnej powietrza 70% oraz w temp. 19-27°C i wilgotności względnej powietrza ok 55%. We wszystkich próbkach oznaczono w 4-tygodniowych odstępach czasowych: zawartość suchej masy, zawartość tłuszczu oraz liczbę kwasową i liczbę jodową wyekstrahowanego tłuszczu, sprawdzono również obecność aldehydu epihydrynowego. Uzyskane wyniki porównano z wymaganiami jakościowymi i ilościowymi normy przedmiotowej. Z przeprowadzonych badań wynika, że można przedłużyć okres przydatności do spożycia z 8 do 16 tygodni dla chałwy o zawartości 500 ppm α-tokoferolu przechowywanej w temp. 10°C i wilgotności względnej powietrza 70% oraz do 12 tygodni dla chałwy o zawartości 400 i 500 ppm α-tokoferolu przechowywanej w temp. 19-27°C i wilgotności względnej powietrza ok. 55%.

The aim of the research was to determine the influence exerted by α- tocopherol on reducing oxidation of fats present in halvah and on prolonging the preservation period of halvah. The material under investigation consisted of samples of vanilla halvah of different contents of α-tocopherol, stored at air temperature of 10°C and relative humidity of 70% and also at air temperature of 19-27°C and relative humidity of about 55%. In all of the samples, the following was determined, at 4 week intervals: dry matter content, fat content and the acid value and iodine value of extracted fat, the samples were also checked for presence of epihydrinic aldehyde. The obtained results were compared with quality and quantity requirements of standard specification. It results from the carried out research that the preservation period may be prolonged from 8 to 16 weeks for halvah containing 500 ppm of α-tocopherol, stored at air temperature of 10°C and relative humidity of 70% and to 12 weeks for halvah containing 400 and 500 ppm of α-tocopherol, stored at air temperature of 19-27°C and relative humidity of about 55%.

Celem pracy było zbadanie wpływu ß-karotenu na poziom α- i δ-tokoferoli w próbach, przy użyciu triacylogliceroli smalcu jako substratu. Dodatkowo zbadano skuteczność przeciwutleniającą tych związków. Stwierdzono, że rozkład tokoferoli w przechowywanym smalcu zależał nie tylko od ilości nadtlenków, ale był szybszy przy ich niższych stężeniach w substracie i większym dodatku ß-karotenu.

The aim of the work was to examine ß-carotene as a synergist added in two doses to α and δ-tocopherol. As well as determine its antioxidant activity. The experiment was performed using pork lard as a triaciloglicerol substrate. It was found that tocopherol disintegration in lard depends on quantity of peroxide and it is faster as its concentration in substrate is lower and higher amount of ß-carotene is added.

Vitamins are essential for the health of all living organisms. Vitamins E, A, D and K are known as fatsoluble vitamins, and deprivation of vitamin E causes various disorders, especially in the reproduction and cardiovascular systems and in muscle functions. Vitamin A, on the other hand, has roles in various biological functions – like eyesight – and the growth, reproduction and differentiation of epithelial cells. Vitamin A deficiency leads to the keratinization of the epithelium, and disorders related to the metaplasies of the genital and genitourinary systems. Conversely, vitamin D is defined as a pro-hormone and is responsible for Cahomeostasis, and thus indirectly affects the bone metabolism, bone structure, and cellular and neural functions of Ca. White Muscle Disease (WMD) can occur in newborn lambs, but is more commonly seen in lambs of up to 3 months of age. In this study, 30 lambs of 3 to 50-days-old from different flocks diagnosed with White Muscle Disease (WMD) were selected as research material, while the control group consisted of 8 healthy lambs. With the aim of clarifying the cause of WMD, serum fat-soluble vitamins, retinol, α-tocopherol and vitamin D3 levels were determined in 16 lambs. Gluteal and heart musclet issue samples also were taken from 30 lambs with WMD. The vitamin levels of the samples were analysed by HPLC. The levels of serum α-tocopherol, retinols, and vitamin D3 were foundto be low in the diseased animals, but only retinol (p < 0.001) and α-tocopherol (p < 0.001) level differences were statistically relevant. Macroscopically, Zenker’s necrosis was determined in the heart muscles of 17 lambs, and in the gluteal and chest muscles of 6 lambs. 7 lambs displayed necrosis in both their heart and in gluteal muscles. The samples were analyzed microscopically to reach similar findings: swollen homogeneous pink muscles, pycnotic nuclei, and hyperaemic and haemorrhagic blood vessels in gluteal, chest and heart muscles. Hyaline degeneration and Zenker’s necrosis, dystrophic regions in necrotic areas, cc was detected as a severe disease in lambs at an early stage of life with advanced degeneration in different muscle tissues. Deficiency of fat-soluble vitamins was also detected in the sick animals. Control group lambs had higher levels of α-tocopherol and retinol (p < 0.001) compared to the sick lambs.

Oznaczano poziom magnezu oraz wapnia w sklepieniach kostnych czaszek 8-miesięcznych szczurów, których matki przed zapłodnieniem otrzymały 2,3,7,8-tetrachlorodibenzo-p-dioksynę (TCDD) w jednorazowej dawce 5 μg/kg m.c., a następnie przez trzy tygodnie suplementowano je roztworem α-tokoferolu (witaminy E) w dawkach: 30 mg/kg m.c. lub 420 mg/kg m.c. Grupę kontrolną (K) stanowiły samice, które nie zostały poddane działaniu jakichkolwiek środków farmakologicznych. Pomiędzy badanymi grupami zawartość magnezu oraz wapnia różniła się istotnie statystycznie. Uzyskane wyniki wskazują na możliwość ochronnego działania niskich dawek α-tokoferolu podawanych przed zapłodnieniem samicom szczurów na poziom magnezu i wapnia w tkance kostnej ich przyszłego potomstwa.

Level of Mg and Ca was detd. in bones of the cranial vault in 8-month-old rats whose mothers received 5 μg/kg b.w. of 2,3,7,8-tetrachlorodibenzo-p-dioxin (TCDD) three weeks before insemination. A simultaneous treatment with α-tocopherol (vitamin E) in the 30 mg/kg b.w. (TCDD + E group vitamin) or 420 mg/kg b.w. (TCDD + E group vitamin) dose was carried out for 3 weeks. The control group consisted of subjects whose mothers did not receive any pharmacol. treatment. Statistically significant differences in av. Mg and Ca concns. were obsd. A protective effect of a low dose of α-tocopherol on Mg and Ca level in the bone tissue of rat offspring after intoxicating rat females with TCDD before insemination was evidenced.

Twenty adult (8 to 10 months old) male New Zealand White rabbits were divided randomly into four equal groups. After preparation of each rabbit for surgical procedure, the right deep digital flexor tendon was crushed in a standard method. Then the limb was fixed with external coaptation for 7 d. The post-operative treatment in each group included: no treatment (CN), ascorbic acid, 100 mg.kg⁻¹, i.p. (AA), α -tocopherol, 20 mg.kg⁻¹, i.m. (AT), and both vitamins simultaneously (CM) for nine consecutive days. At the 13th d after surgery each rabbit was euthanized and tissues from the crushed tendon were prepared for ultrastructural evaluation by transmission electron microscopy. The median values of collagen fibril diameter in the AT group were the highest; group AA was more than the CN and CM groups; and group CM was the least. The results obtained indicated a significant positive effect of ascorbic acid and α-tocopherol on collagen fibril structural properties and tendon healing. However, combination of both vitamins had no synergistic effect on tendon healing and even significantly decreased the effect in comparison to each individual vitamin (P<0.05).

In rats exposed for 28 days (5 hours a day) to ozone at a concentration of 0.5 ppm and receiving alpha-tocopherol at doses of 4.5 mg/rat and 15 mg/rat, levels of acute phase proteins (APP) - C-reactive protein (CRP), ceruloplasmin (Cp), total protein, gamma-globulins, and activity of lysozyme in blood serum were studied. The assays were performed in the presence of respective control groups, i.e. rats receiving the same doses of alpha-tocopherol but not exposed to ozone, a group of animals not supplemented with vitamin but exposed to ozone, a group of animals injected with physiological fluid and a control group not subjected to any of the treatments. The study revealed that the ozone-exposed animals had an increased lysozyme activity and a decreased total protein level. However, in rats protected by alpha-tocopherol and exposed to ozone, the concentration of APP, lysozyme activity and total protein were found to be decreased. Similar relationships also occurred in animals receiving alpha-tocopherol and not exposed to ozone.

This study was conducted to evaluate the effects of combined deficiencies of Se and vitamin E on catalase activity in order to investigate the possible interactions between Se, α- tocopherol, and catalase in lambs with white muscle disease (WMD). Ten healthy and fifteen WMD affected lambs of the Akkaraman breed were used. Serum α-tocopherol and Se levels, and catalase activity were analysed. The catalase activity as well as α-tocopherol and Se levels in lambs with WMD before the treatment (day 0), were found to be lower than those of the control group (P<0.001). Therefore, the catalase activity should be taken into consideration in lambs with WMD.

The effects of lead, copper, cadmium and mercury on the content of chlorophyll, proline, retinol, α-tocopherol and ascorbic acid were investigated in 17-day-old bean seedlings (Phaseolus vulgaris L.) grown in Hoagland solution spiked with various concentrations of Pb, Cu, Cd and Hg. Control and heavy metal-treated plants were grown for 10 days in Hoagland solution. Content of total chlorophyll (a and b), proline, retinol, α-tocopherol and ascorbic acid was measured in ten-day-old primary leaves by High Performance Liquid Chromatography (HPLC). Total chlorophyll content declined progressively with increasing concentrations of heavy metals. A significant increase of proline, retinol, α-tocopherol and ascorbic acid content was detected in primary leaves after ten-day exposure to heavy metals. The strongest effect on total chlorophyll, proline, retinol, α-tocopherol and ascorbic acid content was found in plants exposed to mercury, followed by the sequence Cd++ > Cu++ > Pb++.

W pracy przeanalizowano procesy oksydacyjne, na podstawie zawartości nadtlenków, aldehydu malonowego i produktów utleniania cholesterolu, w lipidach mięsa oraz ich wpływ na cechy sensoryczne mięsa kurcząt żywionych paszą wzbogaconą w olej rzepakowy, nasiona lnu i alfa-tokoferol. Badania obejmowały ocenę akceptacji smaku i zapachu, uzupełnioną profilowaniem sensorycznym mięsa bezpośrednio po pieczeniu i przechowywanego w warunkach chłodniczych przez 4 i 6 dni. Przeprowadzone badania wykazały, że czas chłodniczego przechowywania miał istotny wpływ na wyniki oceny sensorycznej mięsa. Ilość dodanego oleju roślinnego do paszy miała natomiast znaczący wpływ na dynamikę procesów oksydacyjnych zachodzących w lipidach mięsa kurcząt. Wykazano również zależność pomiędzy zmianami smaku i zapachu mięsa, a dynamiką procesów utleniania lipidów w mięśniach piersiowych i mięśniach nóg.

In the research work the oxidative processes of lipids (content of peroxides, malonaldehyde and cholesterol oxidation products) and their influence on sensoric evaluation of chicken meat of chicken fed with the diet supplemented with rape oil, flax seeds and alfa-tocopherol were analysed. Sensoric analysis of taste and odour supplemented with sensory profile of meat after roasting and 4 and 6 days of refrigerated storage was carried out. Passed analysis proved that cooling storage time had significant influence on sensoric evaluation of chicken meat. Amount of vegetable oil added to fodder had significant influence on dynamics of oxidative processes in meat lipids. The relationship between changes in taste and odour and dynamics of oxidative processes of lipids in breast and leg muscles has been confirmed in our experiment.
