Oznaczono zawartość karotenoidów i chlorofili w siedmiu preparatach białkowych otrzymanych w Japonii na skalę pilotującą z trzech roślin - lucerny, owsa i trawy rajgras. Testowano również handlowy preparat otrzymany z lucerny bez - i z dodatkiem czerwonego barwnika (w stosunku 50/5 i 50/20).

Seven protein concentrates made on a pilot-scale in Japan from alfalfa, oat and rye-grass, were studied. An investigation of commercial product obtained from alfalfa without or with the addition of a natural red pigment in the ratio of 50:5 and 50:20, was also included. Chemical composition of protein concentrates under test was observed to be dependent both upon the plant species and the method of their drying. Alfalfa concentrates dried by lyophilization were found to contain the higher amount of carotenes and xanthophyll than those obtained by spray drying. The addition of the pigment increased the carotenes and xanthophyll content, and decreased total chlorophyll content. The addition of the pigment did not change the ratio between „a" and ,,b" chlorophyll in the total chlorophyll content.
