Purpose: The aim of the study was an assessment of the European shelf-life labelling system from the perspectives of food producers and consumers in Poland in the context of its possible impact on food waste. Design/methodology/approach: Qualitative and quantitative research methods were used to conduct the study among key food market participants. Individual in-depth interviews (IDIs) were conducted among senior managers in 18 key food producing companies, an eye-tracking study (ET) involved 30 purposefully selected consumers, and a quantitative survey using the face-to-face interview was undertaken among food consumers in Poland (n = 1145). Findings: The existing regulations regarding date labelling do not support the policy of establishing sustainable food chains. Even though the date label is one of the most eye-catching elements on the food packaging, a great number of Polish consumers are not able to correctly interpret the information – 39% have problems with proper understanding of ‘best before’ date.Less educated consumers more often admit that the information on the date label is difficult for them to comprehend. Food business operators have adopted the date labelling system as a mandatory requirement, although they consider it to be complicated. Research limitations/implications: The research results are partially declarative. It would be interesting to examine the interpretation of the date labels in the purchasing and consumption process. Practical implications: Consumer misunderstanding of the ‘best before’ date contributes to food waste. Point of view of food market participants differ what should be taken into account with regard to the final itineration of the date labelling system. Social implications: Consumer interest in shelf-life dates should be treated as an opportunity in efficient education and building food waste prevention behaviour. Originality/value: Triangulation of quantitative and qualitative methods was applied which allowed for a comprehensive assessment the shelf-life labelling system.
The aim of the study was to evaluate the consumers’ knowledge of the concept of ‘best before’ and ‘use by’ dates, and to assess how it translates into safe and sustainable food-handling behavior in relation to a specific food and a given date type. The face-to-face interview method (N = 1145) was applied with the use of the interview questionnaire. The results showed that groups of 61.1% and 79.0% of Polish consumers who selected the correct meaning of the date had problems with food handling when they were asked about a specific food product. Consumer behavior in this regard depended on the type of product, not on the date type.
Zrównoważony rozwój systemów żywnościowych powiązany jest z transformacją cyfrową przemysłu spożywczego, ułatwiającą przejście od gospodarki linearnej do gospodarki o obiegu zamkniętym. Oparte na koncepcji przemysłu 4.0 systemy kontroli na wszystkich etapach łańcucha żywnościowego i wykorzystanie sztucznej inteligencji do analizy danych, powinny pozwolić na efektywne wykorzystanie surowców, optymalizację procesów, minimalizację ich negatywnego wpływu na środowisko i zapewnienie stałej jakości produktów. Wysoka jakość, uwzględnienie potrzeb konsumentów na etapie projektowania i rozwoju produktów zapewnią żywność o wysokich walorach odżywczych i sensorycznych, i przyczynią się do dobrostanu społeczeństwa i ograniczenia marnotrawstwa żywności. Jednym z wyzwań w przekształceniu przemysłu spożywczego zgodnie z koncepcją przemysłu 4.0 jest opracowanie metod kontroli jakości i ich implementacja w łańcuchu żywnościowym „od pola do stołu”. Prace w tym zakresie wymagają współpracy naukowców i praktyków z różnych dziedzin i są źródłem innowacji.

The sustainability of food systems is linked to the digital transformation of the food industry, which facilitates the transition from a linear to a circular economy. Based on the concept of Industry 4.0, control systems at all stages of the food chain and the use of artificial intelligence for data analysis should allow for the effective use of raw materials, optimization of processes, minimizing their negative impact on the environment and providing high-quality products. High quality, considering the needs of consumers at the stage of designing and developing products, will ensure food with high nutritional and sensory values, and will contribute to the well-being of the socjety and reduce food waste. One of the challenges in transforming the food industry into Industry 4.0 is the development of food quality control methods and their implementation in the food chain ‘from farm to fork’. Work in this field requires the cooperation of scientists and practitioners from various fields and is a source of innovation.
Żywność wytworzona za pomocą druku 3D jest rozpowszechniona w niewielkim stopniu, mimo ogromnego potencjału tej technologii. Celem przeprowadzonego badania była ocena znajomości technologii wytwarzania żywności za pomocą druku 3D oraz jej postrzegania przez konsumentów. W badaniu udział wzięło 406 konsumentów indywidualnych, wśród których przeważały osoby poniżej 40. roku życia. Prawie 60% respondentów nie słyszało wcześniej o możliwości wytwarzania żywności za pomocą technologii addytywnej. Opinie konsumentów na temat żywności otrzymanej z wykorzystaniem druku 3D są zróżnicowane, od wyrażających entuzjazm i chęć eksperymentowania z nową technologią, po prezentujące skrajne odrzucenie i odzwierciedlające obawy związane z brakiem bezpieczeństwa oraz niewystarczającą atrakcyjnością sensoryczną. Komunikowanie korzyści z wykorzystania druku 3D do otrzymywania produktów spożywczych powinno wpłynąć pozytywnie na wzrost akceptacji konsumenckiej omawianej technologii.

Despite the great potential of 3D printing for food production, it is not very widespread. The aim of the study was to evaluate the knowledge of food 3D printing technology by individual consumers and to recognize its perception. The survey was conducted among 406 individual consumers, most of whom were under 40 years old. Almost 60% of the respondents had not ever heard of the possibility of producing food with the use of additive technology. Consumers’ opinions on food obtained by 3D printing vary from enthusiasm and willingness to experiment with new technology, to extreme rejection and concerns about its insecurity and insufficient sensory attractiveness of printed foods. Promoting the benefits of using 3D printing to obtain food products should positively affect the consumer acceptance of the discussed technology.
Background: Open date labelling influences the role that final consumers play as actors in the food supply chain in waste prevention and reduction. The aim of this study was to examine the date labelling system from the perspectives of consumers’ experience taking into consideration both technical aspects of date labels readability as well as their understanding of the concept of the shelf-life dates. Methods: The face to face interview method (n=1145) was applied with the use of the interview questionnaire. Research was conducted in Poland. Results: Despite declared interest in date labelling, consumers of food products experience difficulties with the system in force. Identified problems cover the physical layer of food packaging such as the font size, the presence of information, its readability and accessibility, and the occurrence of two date types on the basis of food quality and safety concept. Problems with correct interpretation of ‘use by’ and ‘best before’ dates were more often observed in the group of youths and with vocational education. The difficulties with too small font of the date information were more often claimed by the elderly food buyers. Conclusions: Actions for improvement should be undertaken by FBO’s, legislators and educators in order to achieve economic, environmental and social benefits from clear and consumer-friendly date labelling system. The actions should be matched to a given population group because different sub-groups face separate problems with the dates on food packaging.
