A rational diet is of particular importance today. The increasing pace of life and intensive work are important factors determining the quality of nutrition. Nutritional awareness is one of the main determinants of the appropriate diet. In order to understand the subtleties of the definition and essence of nutritional awareness, it is necessary to realise its close relationship with lifestyle, health, economic status and mass culture. The aim of the study was to assess the awareness and nutritional behaviour of Polish consumers. The research was carried out using the diagnostic survey method, I.e. the author’s questionnaire. The research has shown that the respondents know the principles of rational nutrition, although they do not always adhere to them, and the choice of food products is largely determined by the price and brand of the product. Respondents are familiar with the concept of “nutritional awareness” and believe that it has a huge impact on health.

The aim of the article is to point out the specifics caused by the way of realization of scientific and technological development in the food industry. The contribution deals with the consideration of specifying the challenges that the food industry is currently facing. It also points to the impact on food security in the Slovak Republic. The subject of the research was the Faculty of Chemical and Food Technology of the Slovak University of Technology in Bratislava. The strengths of this faculty are the great opportunity and space for the implementation of digital transformation in accordance with the Fourth Technology Revolution, and which will bring a number of new technological changes and knowledge.

Przedstawiono informacje dotyczące wzbogacania żywności w witaminy i składniki mineralne, opierając się na najnowszych, danych z piśmiennictwa światowego oraz na krajowych badaniach żywieniowych. Podkreślono znaczenie wzbogaconej żywności w realizacji prozdrowotnego modelu żywienia. Zwrócono uwagę na konieczność wprowadzenia uregulowań prawnych, zarówno w zakresie dodawania substancji wzbogacających do żywności, jak również znakowania i kontroli produktów wzbogaconych.

In formation concerning enrichment of food in vitamins and mineral components, based on the recent data from the world literature and national nutrition studies, have been presented. The role of fortified foods in the implementation of health-promoting system of nutrition has been stressed. The attention has been paid to the necessity of introducing legal regulations in the field of addition of fortifying substances to foods as well as in the range of labeling and control of fortified products.
