Na rynku polskim pojawiło się kilka nowości w kategorii mlecznych napojów fermentowanych, nawiązujących do wschodnich tradycji. Często są one powiązane z kuchnią turecką. W artykule przedstawiono aspekty żywieniowe, zdrowotne, kulturowe i historyczne dwóch najczęściej kojarzonych z Turcją napojów – ajranu i kumysu. Zwrócono także uwagę na fakt, że od bardzo dawna były one popularne w wielu innych krajach Bliskiego i Dalekiego Wschodu, dzięki czemu firmy mleczarskie mogą wzbogacić ofertę i dodać nowy element konkurencyjności.

Some new products in the category of fermented milks, referring to the eastern tradition, have appeared on the Polish market. They are mainly associated with the Turkish cuisine. This article presents nutritional, health, cultural and historical aspects of two products, being most commonly associated with Turkey beverages, ayran and koumiss. The attention is paid to the fact that for a long time they have been popular in many other countries of the Middle and Far East, and today they win hearts of the European customers, including the Polish ones, allowing dairy companies to enrich their offer and add a new competitiveness advantage.

Cholesterol w ludzkim organizmie jest potrzebny do prawidłowego przebiegu procesów życiowych. Jest wykorzystywany do budowy wszystkich błon komórkowych i śródkomórkowych. Jednak jego nadmiar może prowadzić do poważnych komplikacji zdrowotnych, dlatego podejmowane są badania nad obniżeniem poziomu cholesterolu w serum krwi ludzi. Liczne badania in vitro wskazują, że na obniżenie poziomu cholesterolu w podłożach modelowych wpływają bakterie mlekowe - zarówno te powszechnie stosowane w mleczarstwie, jak i pochodzenia jelitowego. Jako jeden z głównych mechanizmów, wg których to zjawisko może następować, wymienia się wiązanie cholesterolu ze ścianami komórkowymi lub/i jednoczesne wbudowywanie go do błon cytoplazmatycznych komórek.

Cholesterol in the human organism is necessary for the correct run of life processes. It is used to build up all cell and endocellular membranes. However, its excess in the organism can cause serious health troubles. Hence numerous attempts over the decreasing of the cholesterol level in human blood serum are undertaken. Numerous in vitro investigations show that lactic acid bacteria both traditionally applied in the dairy technology and those of the intestinal origin possess the ability of reducing the cholesterol level in model laboratory media. As one of principal mechanisms according to which this can occur is the binding of cholesterol to cell walls or/and the simultaneous incorporation of it into membranes of cytoplasm of the cells.
