The article submits the research of influence of thermodiffusion processing (borating and chromium-plating) and of electric-spark hardening on endurance of a cutting machine. The new desing of the cutting set (inverted) is offered which provides improvement of worc and increase of durabilite of a cutting set.

Numerical modeling has been used for the simulation of the grinding process in the meat mincer. The calculation algorithm was based on the use of the net-point methods of the decision of the elastic-visco-plastic initial boundary problem. Within the framework of the developed mathematical model the following results were obtained: meat griding output, structurally mechanical characteristics of the output of force-meat, stress-strain state of grid, longevity of cutting assembly test.
