The content of polyunsaturated fatty acids was determined in the periren and mane fat from carcasses of horses of various grade (I, II and III grade). It was found that the content of fat in the tissues examined is related to qualitative classification of carcasses; lower fat content is found in carcasses of lower grades. Moreover, fat from carcasses of lower grades contains lower amounts of polysaturated fatty acids due to a lower content of linoleic acid. It was also found that horse fat has a higher concentration of polyunsaturated fatty acids than that of other slaughter animal.
