In the paper the analysis of the relationship between economic results and the level of the material outlays’ concentration in private farms is presented. In general, farms with the highest level of the material outlays’ concentration were characterized by the highest profitability of land, while in the group of the lowest level of those outlays the profitability was the lowest. In the case of the productivity of land relationships were similar to the case of its profitability. Social and economic efficiency of labour was higher in the group of farms with the highest level of material outlays, what shows that resources and labour outlays were used effectively. In general farms with an average level of material outlays were characterized by the highest profitability of sale, while farms with the highest outlays were characterized by the lowest profitability. It may show that the effectiveness of material outlays decrease with the growth by unit of the level of outlays. One of possible reasons for that tendency, in comparison with the highest profitability of land in the third group of farms, is using purchased materials for the broader scale, what makes farms independent on their resources of land.

Przemysł mleczarski jest znaczącym działem produkcji artykułów żywnościowych i napojów. Jego produkcja stanowi ok. 13% wartości produkcji sprzedanej całego przemysłu spożywczego, przy udziale w zatrudnieniu i eksporcie rolno-spożywczym wynoszącym po ok. 9%. Przetwórstwo mleka charakteryzuje się stosunkowo niezłą sytuacją ekonomiczną oraz stabilnym i bezpiecznym stanem finansowym, ale wskaźniki rentowności nie są wysokie. Ostatnio obniżyły się i są stale mniejsze niż w całym przemyśle spożywczym, ale rentowność kapitału jeszcze przekracza oprocentowanie lokat bankowych czy obligacji skarbowych.

The dairy industry is a major production sector of food and beverages. Its production accounts for about 13% of the value of sold production of the whole food industry, with participation in employment and agri-food exports at the level of about 9%. Milk processing is a branch characterized by relatively good economic situation and a stable and secure financial state, but profitability indicators are not high. Recently, the mentioned indices have decreased and they are constantly lower than in the whole food industry, but the profitability still exceeds the return on capital of bank deposits or government bonds.

In the paper there were presented two tools for assessing any firm’s performance: Du Pont method and the method of four elements. The first method allows an evaluating the influence of factors determining the effectiveness of assets and own funds of the firm. The second one is used for assessing the financial results of the firm. Methods under consideration can be applied as supplementary for basic tools of financial analysis in the organisation. Although they also are the useful tools for helping management make decision, there are some weaknesses that should be noted. In addition, the analysis is only as good as the level of general knowledge about the investigated organisations (enterprises).

Małe i średnie firmy są dużym i trwałym składnikiem struktury przemysłu spożywczego. Ich udział w sprzedaży żywności i napojów przekracza już 60%. Małe firmy rozwijały się w pierwszej fazie transformacji, a cechą ostatnich 10 lat jest rozwój przedsiębiorstw średniej wielkości. W niektórych działach tego sektora mają one przewagę konkurencyjną nad dużymi przedsiębiorstwami. Dotyczy to m.in. piekarnictwa, przetwórstwa mięsa, owoców i warzyw, ryb oraz produkcji żywności wygodnej. W tych działach małe firmy mają wyższą niż duże i średnie: rentowność sprzedaży, wydajność pracy oraz sprawność gospodarowania majątkiem obrotowym.

Small and medium size enterprises constitute a large and permanent group in the structure of food industry. Their contribution in sales of food and beverages already exceeds 60%. Small companies were developing mainly in the first phase of transition period while the development of medium companies occurred over the last ten years. In certain branches small companies have got competitive advantage over large enterprises, which particularly concerns among the others bakery, processing of meat, fruits and vegetables, fish and the production of convenient foods. Regarding the above branches small companies show higher profitability of sales, labour efficiency and the efficiency of current asset management than medium and large companies.

Badano efektywność produkcji w przedsiębiorstwie zajmującym się przetwórstwem mięsa drobiowego. Stwierdzono, że pomimo kryzysu panującego w branży przetwórstwa mięsa produkcja była rentowna. Wpływ na ten stan rzeczy miało przede wszystkim obniżenie kosztów produkcji. Zarejestrowany spadek rentowności w 2003 roku wywołany został obniżeniem się wartości przychodów ze sprzedaży, przy podobnym jak w roku poprzednim poziomie kosztów produkcji.

It was investigated effectivity of production in an enterprise involved in a poultry meat processing. It was noticed that despite of a crisis in the meat processing trade the production was profitable. The sale profitability was around 2,4% in investigated period and it was morę than twice higher than the profitability of the whole food sector. A decreasing of the production costs had the most important influence on that situation. The noticed decrease of the profitability in 2003 was made by on decrease in sale income value according to similar to the lastyear level of the production costs.

Since the beginning of 2000s the State Forests, National Forest Holding have taken actions to improve the timber sales system. Implementation of the on−line sales in 2006 was one of such actions. The analysis shows that this introduction improved the efficiency of the RDSF in Poznań. Financial profitability doubled, while the yield cash and property sales remained at a stable level.

Stan finansowy spożywczych spółek giełdowych wykazuje duże zróżnicowanie. Jest to zbiór sprawnie funkcjonujących i rozwijających się firm, a także spółek, których wyniki sukcesywnie się pogarszają. W ostatnich dwóch latach pogorszyła się kondycja finansowa badanych spółek. W roku 2000 wystąpiła stagnacja lub niewielka poprawa niektórych mierników, co może świadczyć o zahamowaniu niekorzystnych tendencji.

The food joint stock companies are of two classes, these which are effective and well developing and those whose economic condition is getting worse gradually. The financial condition of the investigated companies has worsen during the last two years. In the year 2000 stabilization or indicate the control of disadvantageous tendencies.
