Przebadano 12 gatunków mrożonych ryb na zawartość ołowiu, kadmu, niklu, cynku, miedzi i chromu. Zawartość metali (oprócz kadmu) była niższa od przewidywanych normami poziomów tych pierwiastków dla ryb.

Concentrations of lead, cadmium, nickel, zinc, copper and chromium in chilled fresh-water and sea fish were determined by atomic absorption spectrometry (AAS). The following average values related to wet weight were found. For fresh-water fish: lead - from 0,111 mg/kg (burbot) to 0,144 mg/kg (bream); cadmium - from 0,016 mg/kg (carp) to 0,068 mg/kg (bream); nickel - from 0,126 mg/kg (carp) to 0,189 mg/kg (burbot); zinc - from 5,68 mg/kg (burbot) to 9,28 mg/kg (carp); copper - from 0,67 mg/kg (bream) to 0,83 mg/kg (carp); and chromium - from 0,413 mg/kg (burbot) to 0,570 mg/kg (carp). For sea fish: lead - from 0,112 mg/kg (mackerel) to 0,191 mg/kg (cod); cadmium - from 0,031 mg/kg (mackerel) to 0,136 mg/kg (Theragra chalcogramma L); nickel - from 0,136 mg/kg (herring) to 0,266 mg/kg (cod); zinc - from 3,80 mg/kg (Norway haddock) to 15,15 mg/kg (herring); copper - from 0,33 mg/kg (Norway haddock) to 1,35 mg/kg (herring); and chromium - from 0,198 mg/kg (mackerel) to 0,435 mg/kg (flounder). Our results are comparable with the literature data. In 75% of all fish samples, cadmium contents were above the limit admissible in Poland. Lead, zinc and copper levels in the fish samples were within the limits admissible in Poland.

Cadmium, lead, chromium, zinc, maganese, copper, nickel and iron content of Polish-made seasoning preparations was determined by atomic absorption spectroscopy. In spite of a wide variety of the products and materials tested in the experiments, the concentration of the Studie elements were generally within the admissible limits. The following average concentrations were found: cadmium from 0,013 ppm to 0,292 ppm, lead 0,083 ppm to 2,120 ppm, chromium 0,332 ppm to 2,620 ppm, zinc 7,26 ppm to 37,00 ppm, manganese 5,10 ppm to 122,00 ppm, copper 0,93 ppm to 8,50 ppm, nickel 0,104 ppm to 2,805 ppm, and iron from 31,00 ppm to 1072 ppm. Cadmium and lead content of some seasoning preparations were higher than the maximum admissible values specified by relevant Polish regulations. The content of the remaining trace elements covered by relevant standarts remained within the specified admissible limits.

Concentrations of lead, cadmium, nickel, zinc, copper and chromium in chilled fruits were determined by atomic absorption spectrometry (AAS) The following average values, related to the wet weight, were determined: lead - from 0,085 mg/kg (strawberry) to 0,205 mg/kg (five-fruit compote composition); cadmium - from 0,009 mg/kg (plum) to 0,032 mg/kg (Aronia melanocarpa); nickel - from 0,074 mg/kg (plum) to 0,345 mg/kg (Aronia melanocarpa); zinc - from 0,95 mg/kg (sour cherry) to 3,10 (raspberry); copper - from 0,54 mg/kg (plum) to 1,44 mg/kg (blueberry); chromium - from 0,128 m/kg (raspberry) to 0,470 mg/kg (five-fruit compote composition). Our results comparable with the literature data. The concentrations of the toxic elements (lead and cadmium) were found to remain within the limits specified by relevant standards.

Pierwiastki oznaczono bezpośrednio z mineralizatu, jak też po ekstrakcji ich kompleksów do fazy organicznej metodą płomieniową atomowej spektrometrii absorpcyjnej.

Cadmium, lead, chromium, zinc, manganese, copper, nickel and iron levels in eight wine and coctail grades were determined by flame atomic absorption spectrometry. Chromium, zinc, manganese, copper, and iron were determined by flame atomic absorption spectrometry directly form the mineralizates. Lead, cadmium and nickel were assayed using ammonium pyrrolidine dithiocarbonate (APDC) as complexing agent and 4-methyl-2-pentanone as organic extraction solvent. Average lead, cadmium and nickel level ranges were: 11,0-51,8 µg/l; 0,4-1,9 µg/l; and 19,4-73,2 µg/l, respectively. Copper and chromium levels in the wines and coctails were form 0,08 to 0,71 mg/l and from 0,010 to 0,060 mg/l, respectively. The highest concentrations were found for iron between 3,36 and 7,30 mg/l. Zinc and manganese levels were in the range 0,20 - 0,56 mg/l and 0,36 - 1,21 mg/l, respectively. Our data were compared with data form other sources and did not exceed the maximum admissible concentration values specified in revelent Polish standards.

Porównano otrzymane wyniki z danymi innych autorów dotyczącymi tej grupy produktów oraz oceniono je w świetle krajowych wymagań odnośnie zawartości metali w produktach spożywczych.

Lead, cadmium, nickel, zinc, manganese, copper, iron and magnesium content was determined in sixteen kinds of home-origin confectionery products. Product samples were incinerated at 450°C and the content of manganese, copper, iron and magnesium was determined directly from the aqueous phase by flame AAS. Cadmium, lead and nickel were also determined by flame AAS using ammonium- pyrrolidindithiocarbamate (APDC) as complexing agent and organic-phase 4-methyl-2-pentanone (MIBK). Mean concentrations of lead and cadmium were 0.050-0.140 mg/kg and 0.013-0.044 mg/kg, respectively, while the detected values ranged from 0.030 mg/kg to 0.285 mg/kg and from 0.009 mg/kg to 0.058 mg/kg, respectively. Nickel concentrations were from 0.050 mg/kg to 0.790 mg/kg, zinc ranged from 2.40 mg/kg to 13.60 mg/kg, and manganese from 2.50 mg/kg to 9.00 mg/kg. Copper contents were within 0.55 mg/kg to 5.65 mg/kg range and iron ranged from 7.00 mg/kg to 56.50 mg/kg. Magnesium content ranged from 100 mg/kg to 810 mg/kg. The concentrations of the toxic metals (lead, cadmium) and those of zinc and copper were found to be within the values specified by respective Polish standards and may be considered to be moderate.

Metodą spektrometrii atomowo-absorpcyjnej oznaczono zawartość ołowiu, kadmu, chromu, cynku, manganu, miedzi, niklu i żelaza w 11 gatunkach miodów pitnych. Stwierdzono stosunkowo male ilości pierwiastków w badanych miodach pitnych w odniesieniu do obowiązujących ograniczeń.

Lead, cadmium, chromium, zinc, manganese, copper, nickel and iron contents in seven grades of mead were determined by atomic absorption spectrometry. Chromium, zinc, manganese, copper and iron were determined directly from the mineralizates by flame AAS. Lead, cadmium and nickel levels were assayed using extraction technique with 4-methyl-2-pentanone after complexing the metals with pyrolydine carbodithionate (APDC). Metal contents ranged: from 24 ro 68 µg/l lead; 0,5-3,0 µg/l cadmium; 5-35 µg/l nickel. Copper and chromium concentrations were from 0,031 to 0,175 mg/l and from 0,013 to 0,05 mg/l, respectively. Highest concentrations were those of iron: 1,38 -12,75 mg/l. The concentrations of zinc and manganese ranged between 0,120-0,900. mg/l and 0,075-2,25 mg/l, respectively. The levels of metals detected in the meads were similar to those reported in wine by other authors and much lower than the maximum admissible values specified for meads in respective Polish Standards.

Measurements of mercury, lead, and cadmium concentrations by AAS were carried out in five bakery products (rye bread, Graham bread, Graham bread roll, buttery bread roll, choice („wyborowa") bread roll) originated from the following three regions: Lublin, Poznań, and Katowice. Mercury was assayed after samples mineralization in the Bothe type apparatus using cold vapour technique. Cadmium and lead were determined after dry mineralization in quartz crucible pots at 400°C using extraction technoque and metals complexing with APDC. Average concentrations as followis were found: mercury - a few microgrammes per kg (twice more in samples taken from industrial region); cadmium - from 0.013 to 0.018 mg/kg in rye bread, from 0.030 to p.041 mg/kg in wheaten bread from not polluted area, from 0.059 to 0.089 mg/kg in wheaten bread from industrial region, from 0.083 to 0.089 mg/kg in Graham bread from industrial region; lead - from 0.030 to 0.207 mg/kg in bread samples taken from not polluted area, from 0.070 to 0.400 mg/kg in samples taken from industrial region.

Lead, cadmium and nickel levels were assayed using extraction technique after the metals had been complexed with APDC. Methyl isobutyl ketone was used as the organic phase. The contents of the remaining elements were determined directly from the mineralizates. The following average concentrations were determined: lead from 0,044 mg/kg to 0,118 mg/kg; cadmium from 0,004 mg/kg to 0,016 mg/kg; nickel from 0,042 mg/kg to 0,500 mg/kg; copper from 0,14 mg/kg to 1,37 mg/kg; zinc from 2,69 mg/kg to 19,37 mg/kg; iron form 2,30 mg/kg to 9,46 mg/kg; manganese from 0,51 mg/kg to 10,43 mg/kg and chromium from 0,017 mg/kg to 0,053 mg/kg. The determined values were comparable to, or lower than, the values reported by others authors.
