In the food production, all the elements from the producer to the consumer must commit to excellence. Excellence in the food sector has a social dimension because all people are consumers of food. TMs paper attempts to examine the understanding of food quality and the role of excellence in food production. The study was conducted among students because of their age and the future social position may decide about the future, a common approach to this particular social problem. Students who taking part in the study, presented well thought out, logical and consistent with the natural human needs approach to food quality characteristics.
