Celem pracy było przeanalizowanie procesu pakowania wybranych produktów mleczarskich pod względem potencjalnych zagrożeń dla bezpieczeństwa i jakości wyrobu gotowego. Zakres pracy obejmował określenie czynników będących przyczyną oznaczenia pakowania jako CCP i zbadanie ich wpływu na jakość i trwałość żywności. Pakowanie ma na celu zabezpieczenie produktu przed działaniem niepożądanych czynników, mogących być poważnym zagrożeniem dla jakości i bezpieczeństwa. W trakcie badanych procesów pakowania mleka, jogurtów i serków termizowanych następował bezpośredni kontakt żywności z maszynami, opakowaniami, personelem, powietrzem. Po tej operacji nie następowały już żadne inne procesy, mogące wyeliminować ewentualne zanieczyszczenia. Pakowanie, oznaczone w badanych zakładach jako krytyczny punkt kontrolny (CCP), prowadzone w odpowiednich warunkach, ogranicza zagrożenia wpływając na trwałość wyrobów gotowych.

The aim of the study is an analysis of the process of packing of chosen diary products in relation to potential threats to safety and quality of the ready product. The scope of the study covered determination of factors which are the reason of marking the packing as CCP and an analysis of their influence on quality and durability of food. Packing is to secure the product against action of undesirable factors which might pose a serious threat to quality and safety. During the analysed processes of packing milk, yoghurts and ´thermo´ cheeses existed direct contact of food with machines, packages, personnel and air. After that operation no other process which might eliminate potential contamination took place. Packing, marked in analysed plants as a critical control point (CCP), done in suitable conditions, limits threats influencing durability of ready products.
Relationships between employment type and the physical work environment were studied among blue-collar workers (n = 1,127). Based on survey data, we set out to compare the evaluations of environmental load and physical strain at work given by fixed-term (17% of all) and permanent workers. The type of employment was not related to environmental load. However, working on a fixed-term basis increased the risk of physical strain at work. Analyses revealed that this connection was evident only among fixed-term construction workers. The results did not support the much-cited view that the disintegration of standard employment has given rise to a new series of work environment problems. Such problems are concentrated in an area with a long tradition of work environment problems, that is, in the construction industry.
