Przeciwutleniacze (antyoksydanty), są to związki chemiczne, przeciwdziałające utlenianiu się produktu lub wzmacniające działanie przeciwutlcniające innych składników. Zasada oddziaływania — dodanego do produktu 'antyoksydantu' — polega na połączeniu tego związku z tlenem, w efekcie proces ten hamuje jego dostęp do innych składników. Z uwagi na zróżnicowany charakter zmian, jakie zachodzą w przechowywanej żywności (fizjologiczne, mikrobiologiczne, biochemiczne, chemiczne i fizyczne), efektywność działania antyoksydantu nie zawsze można ograniczyć do jednej substancji. Lista substancji rekomendowanych przez WHO/FAO znajduje się w spisie Kodeksu Żywnościowego (CodeiAlimentarius) a w Polsce ilości rodzaj substancji określają zarządzenia Ministerstwa Zdrowia i Opieki Społecznej (Dz. LI.).

Antioxidants arę chemical compounds preventing oxidation of a product and/or aiding antioxidative activities of other substan-ces. Operation principle of antioxidant added to a product is ba-sed on bounding oxygen to this compound. This process prevents oxygen from accessing to other components of foodstuff. Because of a varied naturę of changes occurring in stored food (physiolo-gical, microbiological, biochemical, chemical and physical). the effectiveness of oxidant is not always limited to just one substan-ce. The list of chemicals rccommended by WHO/FAO is available in Codex Alimentarius, while in Poland a quantity and a kind of this group of food additives is given m rccommendations of the Ministry of Health and Social Welfare (Dz. U.).

Omówiono nową normę betonową PN-EN 206-1:2003 „Beton. Część 1: Wymagania, właściwości, produkcja i zgodność" ustanowioną w 2003 r. przez Polski Komitet Normalizacyjny w miejsce PN-88/B-06250 „Beton zwykły". Przedstawiono zawartość nowej normy i porównano jaz poprzedniczką. Zwrócono uwagę, że wraz z ustanowieniem PN-EN 206-1 wycofano kilka norm krajowych, w tym dwie z branży hydrotechnicznej. Zasygnalizowano brak ekwiwalent-ności tej zamiany, braki istotnych dla hydro-techniki unormowań oraz potencjalne tego skutki dla praktyki projektowania, kontraktowania robót i wykonawstwa betonowych budowli hydrotechnicznych. Artykuł uzupełniono aktualnym wykazem norm z zakresu technologii betonu.

In the paper there has been discussed the new concrete standard PN-EN 206-1:2003 „The Concrete. Part 1. Requirements, properties, production and compatibility" laid down in 2003 by the Polish Standard Committee to replace the standard PN-88/B-06280 „Normal Concrete". The paper presents the contents of the new standard compared with that of the former one. It has been noticed that at the time of establishment of the standard PN-EN 206-1:2003 there have been withdrawn some national standards and in that number two ones concerning the hydrotechnics. There has been also shown the lack of equivalence of that replacement, the lack of a number of norms being substantial for the hydrotechnics and the potential effects of that on designing, concluding of contracts and execution of hydrotechnica! concrete buldings. The paper has been supplemented by an up-to--date list of standards concerning the technology of concrete.
