The first groundwater bottling plant in Poland was established 210 years ago (1806-1808) in Krynica, and made this spa the birthplace of the bottling industry. The next such utilities were located in Głębokie, Żegiestów, Krościenko on Dunajec, Szczawnica, Szczawa and Wysowa. However, further development of the industry was inhibited for economic reasons in the Period of Partitions: the partitioners wanted to avoid competition of the annexed lands. At the beginning, water was scooped up first into amphorae, then into fired clay jugs, and at the end of the 19th century into glass bottles. The volume of the bottled water in Poland considerably jumped in the 1990s due to introducing the PET-type bottles. In the Małopolska Voivodeship, its groundwaters are currently bottled in 17 localities that provide natural mineral waters, springwaters and medicinal waters all over Poland. The consumption of the bottled waters in Poland has immensely grown from 0.1 dm3/person/year in the 1950s to 96 dm3/person in 2016.

W związku z przystosowaniem krajowych przepisów do standardów Unii Europejskiej, w ostatnim czasie wprowadzono odpowiednie zmiany w dwóch aktach prawnych dotyczących naturalnych wód mineralnych, źródlanych i stołowych. Zmiany objęły ustawę o bezpieczeństwie żywności i żywienia oraz rozporządzenie Ministra Zdrowia o naturalnych wodach mineralnych, wodach źródlanych i wodach stołowych. Zmiany te mają duże znaczenie dla optymalizacji jakości naturalnych wód butelkowanych pod względem bezpieczeństwa zdrowotnego, a także wykorzystania nowych technologii w procesie przygotowania wody do rozlewu. Dla konsumentów oznaczają one jednak duże zmiany w zakresie określeń poszczególnych rodzajów wód.

In connection with the adaptation of the national legislation to the European Union standards, the appropriate amendments have been recently introduced to two laws concerning natural mineral and table waters in Poland. The mentioned amendments covered the law on food safety and nutrition and the regulation of the Minister of Health on mineral, spring and table waters. The said amendments have a significant meaning for optimization of quality of natural bottled water in respect of health safety as well as for utilization of new technologies in the process of preparation of water for bottling. For consumers, they mean, however, the big changes in respect of definitions of the particular types of water.
