Badano przydatność technologii wędzenia dymem zimnym oraz dymem ciepłym w łagodnych warunkach do produkcji filetów z jesiotra. Zaproponowane metody produkcji pozwoliły na uzyskanie ponad 70% wydajności, a wyroby cechowały się umiarkowanym zasoleniem oraz zawartością wody do 60%. Zastosowanie obu metod produkcji pozwoliło na uzyskanie filetów o wysokich walorach smakowych. Nieznacznie wyższe noty uzyskał produkt wędzony dymem ciepłym.

The use of cold and hot smoke technology at mild conditions to the sturgeon fillets production was studied. The production methods enabled one to obtain over 70% yield and moderate salty products containing up to 60% of water. Smoked fillets obtained in both methods exhibited high sensory properties, however slightly higher notes gained products cured in hot smoke.

Highly variable microsatellite DNA loci show high levels of variation per locus and provide molecular markers for species and for populations of small effective size. In this study we applied microsatellite markers to identify specimens belonging to several sturgeon species and their interspecific hybrids. Nine microsatellite loci (Afu-19, Afu-22, Afu-34, Afu-39, Afu-54, Afu-57, Afu-58, Afu-68, Afu-69) were analysed for five species (beluga, Siberian sturgeon, Russian sturgeon, sterlet and paddlefish) and for their three interspecific hybrids: Siberian sturgeon x Russian sturgeon, beluga x sterlet (called bester) and for beluga x bester. Certain alleles at five loci: Afu-22, Afu-39, Afu-54, Afu-57 and Afu-68 were diagnostic for the examined sturgeon species and their interspecific hybrids.

Genetic relatedness between Baltic Sea sturgeon (Acipenser sturio L.) specimens caught in different geographic areas is not clear. According to previous studies, fish captured in different locations within the historic area of A. sturio habitation are genetically different to each other. We have examined a fragment (191 base pairs) of mitochondrial cytochrome b gene of four specimens of A. sturio found in Poland: three fish were preserved in museums of natural history and the bone of one fish was from an archaeological site. DNA sequences of the three museum samples were identical, whereas the DNA sequence of the archaeological sample differed in the 918 position of the cytochrome b gene. All the analyzed DNA fragments were similar to those of Acipenser baeri and genetically distant to Acipenser sturio and A. oxyrinchus.
