Dynamiczny rozwój rynku roślinnych produktów alternatywnych dla wyrobów mlecznych jest konsekwencją zmian nawyków żywieniowych konsumentów, związanych m.in. z kwestiami zdrowotnymi czy środowiskowymi. W celu otrzymania produktów roślinnych o teksturze i cechach sensorycznych podobnych do ich mlecznych odpowiedników, stosowane są różne substancje (np. żelujące) czy zabiegi technologiczne (np. fermentacja). Tłuszczem najczęściej występującym w alternatywach dla serów jest tłuszcz kokosowy (bogaty w nasycone kwasy tłuszczowe). Produkty alternatywne zawierają znacznie mniej białka i więcej węglowodanów niż sery konwencjonalne. Wyzwania w przyszłości stanowią badania nad m.in. reformulacją składu zamienników serów, w celu zwiększenia ich wartości żywieniowej, jak i strukturyzowaniem białek roślinnych, kształtujących właściwą strukturę produktów.

The dynamic development of the market of plant-based dairy products alternatives is a consequence of changes in the nutrition habits of consumers, related to, inter alia, health or environmental issues. In order to obtain plant-based products with texture and sensory characteristics similar to their dairy counterparts, various substances (e.g. gelling) or technological treatments (e.g. fermentation) are used. The most common fat used in cheese alternatives is coconut fat (rich in saturated fatty acids). Plant-based dairy products alternatives contain less protein and more carbohydrates than conventional cheeses. The challenges of the future are research on, inter alia, the reformulation of the composition of cheese substitutes in order to increase their nutritional value, and structuring of plant proteins that create the proper structure of products.
The present work is a part of our studies aimed at clarifying the influence of sterical constraints in N-terminal part of AVP analogues on the pharmacological activity of the resulting peptides. In this study we described the synthesis of four new analogues of AVP substituted at positions 2 and 3 or 3 and 4 with two diastereoisomers of 4-aminopyroglutamic acid and four peptides in which we combined the above modification with the placement of 3-mercaptopropionic acid at position 1. All new peptides were not active in bioassays for pressor, antidiuretic and uterotonic activity.
