Solid state fermentation (SSF) of apple pomace by filamentous fungus Rhizopus oligosporus (generally regarded as safe. GRAS) in a bioreactor with periodical agitation (DRB) is a novel approach in production of functional, high value-added, phenolic supplements for food.
