Milk samples were collected from 2000 to 2001, between 7th to 180th d of lactation from mares differing in age and the number of lactations. The content of DDT and HCH was determined by gas chromatography with electron capture detection. It was confirmed that mare's milk was contaminated with various amounts of hazardous residues of DDT and its metabolites, probably depending on stud localisation.

We present here the results of an exploration of the bacteriophage content of dairy wheys collected from milk plants localized in various regions of Poland. Thirty-three whey samples from 17 regions were analyzed and found to contain phages active against L. lactis strains. High phage titer in all whey samples suggested phage-induced lysis to be the main cause of fermentation failures. In total, over 220 isolated phages were examined for their restriction patterns, genome sizes, genetic groups of DNA homology, and host ranges. Based on DNA digestions the identified phages were classified into 34 distinct DNA restriction groups. Phage genome sizes were estimated at 14-35 kb. Multiplex PCR analysis established that the studied phages belong to two out of the three main lactococcal phage types - c2 and 936, while P335-type phages were not detected. Yet, analyses of bacterial starter strains revealed that the majority of them are lysogenic and carry prophages of P335-type in their chromosome. Phage geographical distribution and host range are additionally discussed.

Milk samples were taken from cows with acute, subacute, chronic, and subclinical mastitis and from healthy cows. The mean activity of lactoferrin (LF) in milk from mastitic cows ranged from 8.9 ±3.0 to 12.1 ±6.9 mU/g protein and was significantly lower than that in milk from healthy cows (29.5 ±15.0 mU/g protein). In group of mastitic cows the highest LF activity was found in cows with chronic mastitis, and the lowest in those with subclinical mastitis. The lactoperoxidase activity in cows with clinical and subclinical mastitis was significantly higher in comparison with healthy cows (1.3 ±1.1 mU/g protein) ranging from 5.5 ±2.6 mU/g protein in subclinical mastitic cows to 8.4 ±5.0 mU/g protein in chronic mastitic cows. Lower LF activities in cows with mastitis than in healthy animals may lead to a decreased antioxidant defence system in mastitic cows.

Ochratoxin A (OTA) is a mycotoxin frequently found in human blood and milk samples in the colder climatic zones. In addition to dietary intake, exposure may occur by inhalation of toxin containing fungal conidia. The purpose of this work was to investigate the level of OTA in blood samples from farm workers and non-farm working controls, and to examine if serum levels of OTA were related to inhalatory exposure to conidia of Penicillium verrucosum, the main OTA producer in temperate climates. Blood samples from 210 participants were analysed for the presence of OTA and IgG antibodies against P. verrucosum conidia. The concentration of OTA was determined by HPLC (DL 10 ng/l), and the IgG level was determined by ELISA. All serum samples contained OTA (mean 397 ng/l, range 21-5534 ng/l). The OTA level in serum was unrelated to farm working, gender, age, and IgG level. The mean IgG level was significantly higher among farm workers than controls. Farm working, or increased inhalatory exposure to P. verrucosum, was not related to higher OTA serum levels. Inhalatory exposure to OTA from farm working seems to be of minor importance compared to dietary intake.
