Viscosity, droplet size and stability against creaming for emulsions stabilized by bentonite particles were investigated. The dispersion system was obtained by means of ultrasound energy. An increase of oil content in the oil phase fraction caused an increase in viscosity arid the mean particle diameter. Simultaneously emulsions were less stable. On the other hand, the greater was the bentonite concentration the better was the stability. In this case also a smaller size of submicron particles was obtained.
