Information on beneficial impact of probiotic microorganisms on human health and effects of prebiotic oligosaccharides on proliferation of the latter microflora are presented in the first part of the article. Its further part focuses on fructans, i.e. structures of natural polyfructans and fructooligosaccharides, mechanisms of function of enzymes involved in their synthesis and methods of manufacturing of prebiotic fructooligosaccharides (FOS) in commercial scale.
The paper reviews study of levan synthesis with bacterial enzymes. The following main subjects are discussed 1) levan description (molecular weight, fructans as substrate in depolymerisation reaction) 2) systematic and profile of bacterial levansucrases (substrate specificity, kinetic of transfructosylation reaction, effects of various agents on synthesis of levan, secretion mechanism and isolation of levansucrase, in vivo and in vitro efficiency of levan production process).
