Based on the analysis of literature, the issue of food safety and nutrition was discussed. The aim of the work is to present the definition of food safety and discuss the factors affecting this safety, as well as legal regulations in this area. At work, based on literature data and binding legal acts regarding food safety and nutrition, factors posing a threat to food safety as well as food safety surveillance systems in place in the European Union and Poland have been characterized. Systems for the supervision of food and nutrition safety including nutrition of soldiers of the Polish Armed Forces have also been described.

W oparciu o analizę literatury omówiono zagadnienie bezpieczeństwa żywności i żywienia. Celem pracy jest przedstawienie definicji bezpieczeństwa żywności i żywienia oraz omówienie czynników wpływających na to bezpieczeństwo, a także unormowań prawnych w tym zakresie. W pracy, w oparciu o dane literaturowe i obowiązujące akty prawne dotyczące bezpieczeństwa żywności i żywienia, scharakteryzowano czynniki stanowiące zagrożenie dla bezpieczeństwa żywności, a także obowiązujące w Unii Europejskiej i w Polsce, systemy nadzoru nad bezpieczeństwem żywności z uwzględnieniem żywienia żołnierzy Sił Zbrojnych RP.

Objectives Individual protection against contamination is the kind of protection provided to persons in an environment contaminated with radioactive substances, and war toxic or biological agents, including the use of gas masks, and insulating or filtration skin protection agents. The aim of this work was to perform a comparative assessment of energy expenditure of chemical troop soldiers wearing L-2 insulating personal protective clothes (PPC) and FOO-1 filter-sorptive PPC during training in the training ground conditions. Surveys on the subjective assessment of comfort related to using the L-2 and FOO-1 PPC were carried out as well. Material and Methods A total of 29 men doing the same training tasks, wearing the L-2 PPC and FOO-1 filter-sorptive protective clothing with an MP-5 filter gas mask, underwent the examination. Measurements of energy expenditure values were done based on the frequency of heart contractions, recorded by the Polar Sport Tester 810 heart rate monitor. Results It was found that an average energy expenditure of soldiers, resulting from performing training tasks, was lower among the subjects wearing the FOO- 1 filter-sorptive PPC, compared to the energy load of the ones using the L-2 PPC. Conclusions According to Christensen’s classification of work severity, the average energy expenditure makes it possible to qualify works performed by soldiers using both types of PPC to moderate work. In the opinion of the examined soldiers serving in the chemical troops, the FOO-1 filter-sorptive PPC increases the sense of security while on a threatened ground. The FOO-1 filter-sorptive PPC is assessed by chemical troop soldiers as better because it hinders tasks fulfillment to a lesser extent. Int J Occup Med Environ Health. 2019;32(5):645–52

Mathematical model is the basis for computer decision support system (DSS) connected with food security strategy, in which food irradiation is one of the methods used for elimination of substance with pathogens. Such system can support an organisation of many different activities in the area of food safety. It can be designed for a specific region, country, etc., and is addressed to State Sanitary Inspection offices. The paper demonstrates the capabilities of the system in modeling activities of sanitary inspection teams aimed at pathogen elimination with the use of electron beam irradiation in procedures of utilisation of animal originated food, related packaging, or other microbiologically contaminated materials. It describes new application of both computer supported decision systems and radiation processing. The elaborated mathematical models show human activities in the process of microbiological contamination elimination.
