Abstrakty
W niniejszej pracy opisano chemiczną metodę oznaczania zawartości biomasy grzybowej w produktach zbożowych. Polega ona na określaniu zawartości ergosterolu (ERG), będącego składnikiem błony komórkowej grzybów mikroskopowych, który jest dobrym wskaźnikiem zawartości mikroflory grzybowej w materiale roślinnym. Metoda ta ma szansę stania się w przyszłości powszechnie stosowaną w laboratoriach zajmujących się analizą żywności. Metodę zastosowano w analizie 175 prób pszenicy, 42 prób owsa, 48 prób jęczmienia, 60 prób żyta, 16 prób pszenżyta naturalnie porażonych zebranych na terenie Polski południowej w latach 2006 oraz 2007.
In this paper chemical method of fungal biomass content determination cereal products is described. It relay on ergosterol (ERG) analysis. Ergosterol is the main sterol found in the cell membrane of fungi. Presented method could be commonly med in analytical laboratories of food. This method was med to analyze 175 wheat samples, 42 oat samples, 48 barley samples, 60 rye samples and 16 triticale samples naturally contaminated. Samples were collected in south part of Poland.
