Abstrakty
Rheological properties of baker's yeast Saccharomyces cerevisiae slurry were investigated at concentrations ranging from 0.002 to 0.17 g d.m./cm3. Flow curves were determined by means of cylindrical rotary one- and two-slot rheometers and a capillary rhe-ometer. In the range of small concentrations and shear rates significant discrepancies were observed between properties determined by rheometers of different size and construction. This was resulted by different characteristics of the individual rheometers revealed particularly near the measuring range boundaries.
