Abstrakty

EN

Data concerning the uretan (EC) occurrence, a cancer-forming compound, occurring, among other things, in alcohol beverages, are presented. The state of investigations concerning the formation of carbaminates and factors contributing to their occurrence increase during the production and storage of the beverages is discussed. The methods of EC determination and the ways of reduction of the content of uretan in wines, vodkas and fruit distillates are presented.
