Selenium content in food products of eliminations diet

W poddanych analizie wybranych grupach produktów spożywczych wykazano najwyższy poziom selenu w produktach mięsnych - średnio 74,48 ±28,47 µg/kg i dostarczały one najwięcej selenu ok. 32,6%, zaś najmniej dostarczały owoce ok. 0,7%, które zawierały średnio 7,60 ±0,41 µg Se/kg.
Selenium is a cofactor of several antioxidant seleno-enzymes, such as glutathione peroxidase and, therefore, is essential for proper functioning of cellular defence mechanisms. Sufficient supply of Se in children is necessary for their proper growth and development. Alimentary studies show that the selenium status is highly dependent on dietary sources. The aim of the study was to determine Se concetrations in food products from elimination diets. The food products from hospital diets of children with food intolerance were digested with concentrated nitric acid in a closed microwave system. Selenium content was analysed by electrothermal atomic absorption spectrometry (ET-AAS) on a Z-5000 instrument (Hitachi, Japan) with Zeeman background correction. Certified reference material (Simulated diet A) was used to test accuracy of this method. The highest levels of selenium in the analysed food products were found in meat products, mean 74.48 ±28.47 µg/kg. The mean contents of selenium were: 25.97 ±9.84 µg/kg in cereal products (bread, corn crunch, rice wafer), 10.78 ±4.42 µg/kg in boiled cereal products, 6.00±2.68 µg/kg in boiled vegetables, 5.79 ±2.15 µg/kg in beverages, and 7.60±0.41 µg/kg in fruits. Our study showed taht the main source of selenium in elimination diet were meat products, 32.6%. The cereal products supply 28.3%, beverages 23.2%, vegetables 15.2%, and fruit 0.7% of selenium.
