Oznaczono zawartość azotanów (III) i (V) w 50-ciu gatunkach produktów wędliniarskich rożnych producentów metodą spektrofotometryczną z odczynnikami Griess 'a. W żadnej z badanych wędlin nie stwierdzono przekroczenia dopuszczalnej pozostałości tych środków konserwujących. Średnia zawartość azotanów (III) wynosiła 9,18 mg NaNO2/kg azotanów (V) - 19,62 mg NaNO3/kg.

The aim of the study was to determine nitrate and nitrite contents in selected meat products. The contents of nitrates and nitrites were determined spectrophotometrically after Griess reaction, according to Polish Standards. Our study revealed, that the mean level of nitrate content was 19,62 mg/kg (4,281-60,58) and the mean level of nitrite content 9,18 mg/kg (0,53-53,80). Levels of nitrates and nitrites contents did not reach 50 per cent of the maximal admissible sanitary level and therefore the studied meat products are not considered to be harmful to the health of the consumers.
