The selected probiotic properties of Lactobacillus plantarum strains and their application to production of bioactive malt beverages

Abstrakty
Celem pracy była ocena przeżywalności wybranych szczepów Lactobacillus plantarum w brzeczce napoju słodowego o pH 2,0 i 2,5 oraz w roztworze dezoksycholanu sodu o stężeniu 1, 2 i 3 mmol/dm3. Po 6 h inkubacji w pH 2,5 stwierdzano jeszcze żywe komórki stosowanych szczepów w ilości 106-107 jtk/cm3, a dla pH 2,0 - w ilości 102-105 jtk/cm3 (ilość wyjściowa około 108 jtk/cm3). Badane szczepy L. plantarum przeżywały w środowisku roztworu dezoksycholanu sodu o stężeniu 1, 2 i 3 mmol/dm3 i po 24 h inkubacji, w środowisku najbardziej stężonego roztworu, stwierdzano jeszcze obecność żywych bakterii w ilości 10'-105 jtk/cm3. Po inkubacji kombinowanej, 4 h w brzeczce o pH 2,0, a następnie po doprowadzeniu do pH 8,0 oraz w roztworze dezoksycholanu sodu o stężeniu 3 mmol/dm3 przez 24 h, w próbkach znajdowały się jeszcze żywe komórki bakterii w ilości 10'-102 jtk/cm3.
The survival ability at malt beverage wort with pH 2.0 and 2.5 of tested strains was investigated at the time 0, 1, 2, 3, 4 and 6 hours. In general, tested strains of lactic acid bacteria showed high resistance at low pH and after 6 hours of incubation observed viable cells on the range 106-107 cfu/cm3 in case of pH 2.5, and 102-105 cfu/cm3 for pH 2.0. A number of lactic acid bacteria was examined in 1, 2 and 3 mmol/dm3 of deoxycholate sodium solution after the time of 3, 6 and 24 hours of incubation. After 24 h of incubation in 3 mmol/dm3 solution of deoxycholate sodium the determined amount of bacteria was l0'-l05 cfu/ml.
