W jedenastu rodzajach soków owocowych i dziesięciu rodzajach soków owocowo- warzywnych i warzywnych oznaczono metodą spektrometrii atomowo-absorpcyjnej zawartość Pb, Cd, Zn, Mn, Cu, Ni i Fe. Oceniono zawartości metali w badanych sokach na tle danych z piśmiennictwa oraz zaleceń ustawowych.
Pb, Cd, Zn, Mn, Cu, Ni and Fe levels were determined by atomic absorption spectrometry (AAS) in eleven Polish-made grades of fruit and vegetable juices. Cadmium, lead and nickel were determined by AAS using 4-methyl-2-pentanone extraction, with dithiocarbonate as the complexing agent. The other elements were assayed by flame AAS directly from the water phase. Mean copper content ranged from 0.07 mg/dm3 to 0.26 mg/dm3, while zinc content was from 0.23 mg/dm3 to 1.36 mg/dm3. Mean manganese and iron levels ranged from 0.24 mg/dm3 to 3.08 mg/dm3 and from 0.74 mg/dm3 to 4.46 mg/dm3, respectively. Mean nickel content was from 0.023 mg/dm3 to 0.18 mg/dm3. Lead and cadmium levels were relatively low, from 9.0 µg/dm3 to 29.0 µg/dm3 and from 0.5 µg/dm3 to 4.0 µg/dm3, respectively. The levels of the metals were below the corresponding maximum admissible values specified by relevant Polish standards for fruit or vegetable juices and drinking water.
