Abstrakty
Dietetic value of milk depends on its cholesterol content. Cholesterol is regarded as a factor conducive to arteriosclerosis in the consumers of milk and milk products. This paper discusses the role of copper and zinc in lipoprotein metabolism, the copper requirements of cows, and the effect of copper and calcium salts of fatty acids in theration on the performance and components of milk, including cholesterol content. On the basis of studies performed, the varying levels of dietary copper (13 and 61 mg Cu · kg⁻¹ DM) given to lactating cows were assumed to have no significant effect on production and basic milk characteristics while they reduced the fat and protein contents in milk. The level of dietary copper did not significantly affect the total cholesterol in milk. The intake of high copper ąoses significantly increased the content of monounsaturated acids in milk, mainly oleic acid. It also reduced low density lipoprotein in blood plasma but did not affect total cholesterol in milk. It was found that the copper did not significantly affect the content of minerals in milk and blood plasma. This was accompanied by an increased content of copper in milk. Dietary fat in form of Ca salts of fatty acids used in the amount of 6% ration DM increased the cow's milk performance but showed no effect on the level of cholesterol and minerals in milk. CaSFAs produced from vegetable oils increase the content of monounsaturated acids in milk, including α-linolenic acid, what improved dietetic value of milk.
