Zawartosc tokoferoli w zbozach i nasionach roslin straczkowych

Zawartość tokoferoli (alfa, beta, gamma i delta) oznaczano metodą HPLC w ziarnach zbóż (jęczmienia, orkiszu, pszenicy, żyta i pszenżyta) oraz w nasionach roślin strączkowych (bobu, grochu siewnego, fasoli zwyczajnej, lędźwianu, soczewicy i soi). W ziarnach wszystkich zbóż stwierdzono obecność badanych tokoferoli. W nasionach roślin strączkowych nie występuje beta-tokoferol, a w nasionach fasoli - również alfa-tokoferol. Przeanalizowano też wpływ obróbki technologicznej żyta i pszenżyta na zmiany zawartości witaminy E. Moczenie w wodzie i prażenie ziarna powodowały najmniejsze straty (15-20%) tej witaminy.

The content of alpha, beta, gamma and delta-tocopherols by means of HPLC in cereals and legumes were determined. There were found all forms of tocopherols in cereals and lack of beta-tocopherol in legumes. In addition alpha-tocopherol was not present in bean. Effect of technological processing on vitamin E content also has been examined. Soaking in water and treatment by temperature 135°C caused the least losses (15-20%) of vitamin E.
