Abstrakty
Przeprowadzono badania zawartości żelaza w tkankach zwierząt rzeźnych (świń, bydla, kurcząt, dziczyzny ryb) i mleku. Badania materiału zwierzęcego w okresie trzech lat (2001-2003) wykazały, że właściwości osobnicze i gatunkowe w zasadniczym stopniu wpływają na obecność tego pierwiastka w organizmie.
In the years of 2001-2003, the content of iron in slaughtered animals and milk were monitored. Iron concentrations in muscle, liver and kidney from pigs, cattle and wild game; in muscle and livers from chicken; muscle from fishes and milk were determined by flame AAS using an air-acetylene flame in a Varian Atomic Absorption Spectrometer. The monitoring study indicated that the mean content of iron in milk were generally low (mean - 0.32 mg/kg). The higher concentration of this element was found in animal muscles. The levels in muscle of pigs, chicken and fish were as follows: 6.15 mg/kg, 3.46 mg/kg and 3.32 mg/kg. Particularly higher concentration of iron was determined in muscle of cattle (mean - 16.98 mg/kg) and wild game (mean - 29.60 mg/kg). The concentrations of iron determined in the individual samples of liver and kidney in all examined animals were in wide range: in liver from 1.97 mg/kg to 170.28 mg/ kg and in kidney from 7.28 mg/kg to 306.21 mg/kg.
