W mięsie drobiu i jego przetworach oznaczano zawartość azotanów(III) i azotanów(V) metodą Griessa-Ilosvay'a. Suma azotanów(V) i azotanów(III) w przeliczeniu na NaNO2 nie przekraczała poziomu 125 mg NaNO2 i wahała się w granicach od 55,71 mg NaNO2/kg w szynce drobiowej do 67,29 mg NaNO2/kg w polędwicy z indyka.
Nitrite and nitrate content in poultry meat, giblets, and poultry products was determined by the Griess-Ilosvay method. The levels of inorganic nitrogen forms determined in poultry meat and giblets were low, without a significant effect on their dietary intake. However, significant amounts of nitrites and nitrates were detected in poultry meat products. The highest content of nitrites was found in turkey ham, averaging 13.65 mg NaNO2/kg, whereas the lowest content was detected in chicken hot dogs, averaging 10.71 mg NaNO2/kg. The levels of nitrates were also high; the highest concentrations were found in turkey loin, averaging 82.60 mg KNO3/kg, while their lowest levels were detected in minced poultry ham, averaging 66.24 mg KNO3/kg. Total nitrite and nitrate level in terms of mg NaN02/kg did not exceed the legally admissible level of 125 mg NaNO2/kg.
