Purpose: The aim of this article is to understand how Polish winemakers make decisions about the type of production; to identify barriers of implementation of organic practices organic, to understand the values that are behind the decision-making process in the context of the three areas of sustainable development and present recommendations in relation to the conclusions. Design/methodology/approach: Methodological approach is based on Analytical Hierarchical Process (AHP). The study included 18 values grouped according to belonging to the environmental, social and economic area. The importance of each value was compared by the respondents with the other values, which allowed to understand the course of the decision-making process in the context of the goals and importance of environmental, social and economic values represented by organic and conventional winemakers. Findings: The research revealed significant differences in the approach to the environmental and economic values. Conventional and organic winemakers differ in the hierarchy of values in the context of the triad of sustainable development (economy, society, environment), and the key values taken into account by conventional winemakers are pecuniary values, in contrast to organic winemakers, for whom non-economic values are key, in particular from the area of environmental issues. Organic production is perceived by the surveyed winemakers in ideological rather than business terms. Conventional winemakers see the organic production as more complicated and problematic. Practical implications: This is a significant problem showing the lack of education and awareness in relation to the theory and practice of an organic production. This situation should be alarming for agricultural advisory institutions and the entities of administration responsible for the implementation of sustainable development assumptions. Originality/value: This paper fills a gap in literature science, by the Authors' knowledge, this is the first article to use the AHP method to determine how winemakers make decisions about the type of production.

Purpose: The aim of the study was to diagnose attitudes and consumption behaviors among the young adults, regarding food consumption in Poland. Design/methodology/approach: 483 respondents took a part in the research. They were students of three Cracovian universities, representing all voivodships in Poland. The research instrument consisted of two types of questions: traditional closed survey questions and a series of projection questions, based on fictional characters, which the respondents had to assess and determine the degree of identification with the attitudes and behaviors described. Findings: The research revealed some akrasia. The relatively high level of awareness regarding the effects of unsustainable production and consumption of young adults did not translate into consumption behavior of a sustainable nature. The curiosity regarding origin of the product and its composition turned out to be low, as was the feeling of responsibility for their own decisions. There was a tendency to expect the transition of responsibility to food producers and the institutional environment. Young adults pay special attention to food prices and easy access to shopping. Local marketplaces are a niche shopping place. The majority of food is purchased in large-area stores, where consumers are not informed about the place of origin of food. The respondents group is characterized by high outside-diagonality, solutions forcing more sustainable behavior, for example, the payment for plastic bags, the need for recycling of waste meet with wide acceptance. Originality/value: The research revealed enforcing proecological behaviors by institutions seems to be a more effective than building consumer awareness.

Historically, the value theory was based on an objectivist approach, where the value of the goods arises through the involvement of private means of production, with a special role of work or a subjectivist approach, where value is a subjective phenomenon and depends on marginal utility of the economic entity. The neoclassical revolution replaced the vague value theory with price theory, the economic reality and consumer expectations led to a situation in which lowering the price of goods at the expense of the environment became a commonly accepted mode of operation. For a long time, the value theory in economics was not an area of reflection, both in the sense of economic and moral value. It was assumed that the subjective character of the value phenomenon makes the analysis of value elusive for the tools of economics. At the same time, environmental goods were considered to be so-called free, occurring in unlimited quantities. These assumptions have contributed to the development of an economics theory that is the antithesis of the economics of sustainable development, excessively exploiting the environment and, indirectly, society as well. The assumptions of sustainable development redefine the space for interpretation of the value theory and imply a change in the approach to an environmental element that cannot be understood in the sense of a free good and which imposes an objective understanding of values that can be preserved or lost in the production process.

Historycznie, teoria wartości opierała się na obiektywistycznym podejściu, gdzie wartość dobra powstaje poprzez zaangażowanie prywatnych środków produkcji, ze szczególną rolą pracy lub też subiektywistycznym podejściu, gdzie wartość jest zjawiskiem o subiektywnym charakterze i zależna jest od użyteczności krańcowej podmiotu gospodarującego. Neoklasyczna rewolucja zastąpiła niejasną teorię wartości teorią ceny, rzeczywistość gospodarcza i oczekiwania konsumentów doprowadziły do sytuacji, w której obniżanie ceny dóbr kosztem środowiska, stało się powszechnie przyjętym sposobem działania. Przez długi okres teoria wartości w ekonomii nie stanowiła obszaru rozważań, zarówno w znaczeniu wartości ekonomicznej, jak i moralnej. Przyjęto, że subiektywny charakter zjawiska wartości czyni analizę wartości nieuchwytną dla narzędzi ekonomii. Jednocześnie dobra środowiskowe uznawane były za tzw. wolne, występujące w nieograniczonych ilościach. Te założenia przyczyniły się do rozwoju gospodarki będącej antytezą ekonomii rozwoju zrównoważonego, nadmiernie eksploatującej środowisko, a pośrednio również społeczeństwo. Założenia rozwoju zrównoważonego otwierają na nowo przestrzeń do interpretacji teorii wartości i implikują zmianę podejścia do elementu środowiskowego, którego nie można rozumieć już w znaczeniu dobra wolnego, i który narzuca obiektywne rozumienie wartości, która w procesie produkcji może zostać zachowana lub utracona.
