The basic of the total quality management (TQM) is satisfaction of consumer and for many of them it means a high quality. Satisfaction of consumers is connected with many kind of needs. The term „quality” is very often used but it is difficult to define. In literature the term quality is closely related to commercial and functional usefulness and also with nutritional value. The most important determinants of the quality of nutritional products are for example: food and product safety, sensory value and easy to use.
