Badano wpływ homogenizacji ciśnieniowej oraz ścinania w młynku koloidalnym na krzywe płynięcia i stabilność reologiczną mieszanego jogurtu. Stwierdzono, że w wyniku operacji mechanicznych struktura zawiesiny białkowej w jogurcie ulegała naruszeniu, co przejawiało się spadkiem lepkości pozornej. Jednocześnie jogurt nadal był reologicznie niestabilny. Po 24 h relaksacji następowała częściowa odbudowa struktury, która jednak była słaba i ulegała degradacji podczas pomiarów charakterystyk płynięcia.

Effects of pressure homogenization and shearing in a colloid mill on flow characteristics and rheological stability of stirred yogurt were investigated. It was found that the mechanical treatment applied caused the impairment of protein suspension structure, expressed by the decrease of apparent viscosity. At the same time, yogurt was further rheologically unstable. After 24-hour relaxation a partial rebuilding of the structure was observed, however the structure was weak and underwent degradation during the measurements of flow characteristics.

W pracy przedstawiono analizę procesu narastania przemieszczeń prowadzącego do utraty stateczności belki stalowo-betonowej. Rozwiązanie przedstawiono dla przekroju mającego jedną oś symetrii prostopadłą do wektora momentu zginającego, obciążonego osiowo stałą wartością siły. Założono też idealne zespolenie stali i betonu bez możliwości wzajemnych poślizgów.

The analysis of the increasing of dislocation process lead to the loss of the stability of the steel-concrete beam was introduced in the work. The solution was introduced for the section possesses one axis of symmetry perpendicular to the vector of bending moment, burdened the axles constant value of strength. Also ideal junction of steel and concrete without the possibility of mutual slides was assumed.
