Celem pracy było zbadanie wpływu pakowania w atmosferze o różnej zawartości tlenu i ditlenku węgla na zmianę barwy szpinaku i jarmużu o małym stopniu przetworzenia.. Do pakowania produktu zastosowano następujące składy atmosfer (% tlenu/% ditlenku węgla, azot do 100%): 20/25; 20/0; 20/5; 10/10; 2/98 i powietrze. Zapakowany szpinak i jarmuż przechowywano przez 12 dni w temp. 4 stopnie Celsjusza. Ocena zmian barwy, przeprowadzona po 1, 6 i 12 dniach przechowywania, obejmowała pomiar parametrów barwy: L*, a*, b* oraz ocenę sensoryczną. Na podstawie przeprowadzonych doświadczeń stwierdzono, że w ocenie instrumentalnej, we wszystkich rodzajach zastosowanych atmosfer, nie odnotowano zarówno dla jarmużu, jak i dla szpinaku, bardzo wyraźnych różnic w zmianach parametrów barwy w czasie 12 dni przechowywania. Większe zmiany barwy zaobserwowano w ocenie sensorycznej obu roślin. Spośród badanych wariantów pakowania najbardziej niekorzystne zmiany barwy w czasie przechowywania, zarówno w ocenie instrumentalnej, jak i w ocenie sensorycznej, dla obu surowców zaobserwowano dla prób pakowanych w atmosferze o składzie 2% tlenu i 98% ditlenku węgla.

The aim of this study was to the effects of packaging in modified atmospheres containing different composition of oxygen and carbon dioxide on colour changes of minimaly processed spinach and kale leaves. The product was packages in modified atmosphere with the following compositions (for O2 and CO2 respectively): 20|25; 20/0; 20/5; 10/10; 2/98 and in the air and stored at the temperature of 4 degrees of Celsius for 12 days. The colour analysis included measurements of colour parameters such as L*, a*, b*. The also involved the sensory evaluation. The examinations were performed after 1, 6 and 12 days of storage. According to instrumental evaluation, it can be concluded that no clear colour differences in colour parameters could be detected either for spinach or kale after 12 days of storage. The greater changes were observed in sensory examination of spinach and kale. In both sensory and instrumental evaluation, among the examined gas combinations, the least beneficial colour changes of spinach and kale leaves were detected for sample stored in the atmosphere of 2% O2 and 98% CO2.
