Znaczenie kultury bezpieczeństwa w przemyśle spożywczym od lat systematycznie rośnie, ale nie bez trudności. Problemem badawczym podjętym przez autorów jest uzyskanie odpowiedzi na pytanie: czy i w jakim stopniu zagadnienie to jest obecne w normach i standardach rekomendowanych przez Global Food Safety Initiative (GFSI). Celem artykułu jest przedstawienie ogólnej istoty kultury bezpieczeństwa żywności oraz ukazanie jej związku z wymogami wskazanych norm i standardów. Zastosowano następujące metody badawcze: analiza literatury, analiza danych wtórnych, synteza i wnioskowanie. W artykule zdefiniowano pojęcie kultury bezpieczeństwa żywności z perspektywy kultury organizacyjnej i narodowej. Autorzy pracy przeanalizowali wszystkie standardy i normy pod kątem wymagań kultury bezpieczeństwa żywności. Poruszono również problem oceny kultury bezpieczeństwa żywności.

The importance of a safety culture in the food industry has been constantly growing over the years, but not without problems. The research problem undertaken by the authors is to answer the question: whether and to what extent this issue is present in the norms and standards recommended by the Global Food Safety Initiative (GFSI). The aim of the article is to present the general essence of the food safety culture and to show its relationship with the requirements of the standards mentioned above. The research methods were as follows: the method of literature analysis, the method of secondary data analysis and the method of synthesis and of concluding. The article defines the concept of food safety culture from the perspective of the organizational and national culture. The authors of the study analysed all standards and norms in terms of the requirements of the food safety culture. The problem of food safety culture assessment was also discussed.
