The synthesis of polyglycerol esters of lauric (dodecanoic) acid was investigated. The effect of the temperature, the catalyst concentration and the time of the reaction on glycerol polymerization and polyglycerol esterification was examined. It has been shown that changes of this parameters influenced the composition of emulsifiers and the HLB value. It was found that mixtures of mono-, di-, triacylglycerols and esters of di- and triglycerols are the products of esterification. The obtained emulsifiers with the HLB values from 4.9 - 14.0 may be used to stabilize the O/W and W/O emulsions. For the preparation of emulsifiers - ester of polyglycerols and fatty acids, renewable fatty raw materials may be used.
