W przedsiębiorstwach reorganizacja procesu nie jest łatwym zadaniem, gdyż wymusza na osobach ją przeprowadzających spojrzenie na cały proces pod różnym kątem, z każdego możliwego punktu widzenia. Powoduje przez to ciągłe poszukiwanie nowych rozwiązań, które pozwoliłby osiągnąć zamierzony rezultat. W badaniach podjęto próbę przeorganizowania procesu produkcyjnego wykorzystując dane z przedsiębiorstwa, mapowanie całego procesu z uwzględnieniem wymagań klientów. Przeanalizowano rozbudowę stanowisk, dodatkowe zatrudnienie pod potrzeby zmiany cyklu pracy na linii produkcyjnej. Zmiany przedstawiono w postaci proponowanego stany w procesie mapowania. Reorganizacja procesu produkcyjnego pozwoli na utrzymanie stałych klientów w przedsiębiorstwie i pozyskanie nowych.

The businesses reorganization process is not an easy task, since it forces people carrying look at the whole process from a different angle, from every possible point of view. This results in the constant search for new solutions that would achieve the desired result. The study attempted to reorganize the production process using data from the company, mapping the entire process taking into account the requirements of the customers. We analyzed the development of positions, additional employment for the needs of changes in the work on the production line. Changes are shown in the form of the proposed conditions in the mapping process. The reorganization of the production process will allow for the maintenance of regular customers in the enterprise and attracting new ones.

Background: Washing and disinfection in the food industry are major operations, affecting safety and stability of final products and therefore they are critical point of the production process. The proper organization of this part of the process ensures significantly the efficiency of the whole process. Methods: The paper presents the process of washing and disinfection as well as control methods to assess their efficiency in meat processing plants. Their properties and application of washing and washing and disinfecting agents were characterized. Requirements imposed on washing and disinfecting agents used in the food industry are reported. Conclusions: It is essential to have knowledge on problems related to organization and optimization of cleaning process in order to properly organize the whole production processes in meat industry.

Wstęp: Mycie i dezynfekcja w przemyśle spożywczym są jednymi z ważniejszych operacji, które mają wpływ na bezpieczeństwo i trwałość gotowych produktów, dlatego też stanowią punkty krytyczne procesu produkcji. Metody: W pracy przedstawiono proces mycia i dezynfekcji oraz metody kontroli oceny ich skuteczności działania w zakładach przemysłu mięsnego. Scharakteryzowano właściwości oraz zastosowanie środków myjących i myjąco - dezynfekujących. Podano wymagania stawiane środkom myjącym i dezynfekującym stosowanym w przemyśle spożywczym. Wnioski: Znajomość tych zagadnień jest istotna dla prawidłowej organizacji oraz optymalizacji całości procesu produkcyjnego w przemyśle mięsnym.

We wprowadzeniu przypomniano istotę trójukładowego (trójpłaszczyznowego) modelu monitoringu i analityki wnętrza podziemnych kopalń oraz omówiono aktualny stan instrumentów stosowanych w tym zakresie w górnictwie węgla kamiennego. Omówiono problemy i perspektywy wdrażania w kopalniach systemu SRK realizującego terytorialny układ rozliczeń - podstawowy w modelu trójukładowym. Wskazano kierunki usprawniania systemu ORK realizującego organizacyjny układ rozliczeniowy oraz zarysowano perspektywę przygotowania dla kopań układu procesowego. W podsumowaniu i wnioskach podkreślono nieodzowność proefektywnościowej modernizacji systemów analityczno - rozliczeniowych i systemów planowania inwestycyjno-produkcyjnej działalności kopalń - jako warunku utrzymania konkurencyjności naszego węgla na otwartym rynku Unii Europejskiej.

The essence of the three-system (three-plane) model of monitoring and analytis of the interior of underground mines is reminded in the introduction and the present state of instruments used in this scope discussed. There are also discussed the problems and perspectives of implementation in mines of the SRK system realising the territorial system of settlements of accounts - basic in the three-system model. The directions of improving the ORK system realising the organisational system of settlements is indicated as well as the perspective of mines preparation for the process system outlined. The necessity of pro-effectiveness modernisation of analytical-settlement systems as well as the systems of investments and production performance planning of the mines, what is the condition for maintaining the competitiveness of our coal on the open EU market, is stressed in the summary and conclusions.
