Polskie przetwórstwo rybne intensywnie rozwinęło się w ciągu ostatniego 25-lecia. Szczególnie szybki rozwój przypada na lata 2004-2015, kiedy realizowane były programy pomocowe UE. Obecnie nowoczesny przemysł rybny pod względem wielkości produkcji plasuje się na piątym miejscu w UE. W artykule przedstawiono ważniejsze obszary, w których prowadzono najistotniejsze wdrożenia innowacyjne zarówno procesowe, jak i produktowe. Przedstawiono problemy których rozwiązanie jest konieczne, dla dalszego rozwoju branży.

Polish fish processing industry has greatly developed in last 25 years. The greatest development period was in the years 2004-2015; it was a time when the EU programs were implemented in Poland. At present, the Polish fish industry is ranked as number 5 among the EU countries. The paper describes the most important areas in which innovations in the fields of technology and products were introduced. Additionally, the Author has presented essential problems for the future development of Polish fish industry.

This study investigated musculoskeletal symptoms among sanitation workers of a fish-processing factory. The methods used included administration of a questionnaire, walk through observation, interview, task analysis and future workshop. All 27 male participants answered and submitted their questionnaires. Of the 11 operations identified, all except one was considered safe. Bent back, bent legs, and heavy manual handling were observed to impose intolerable health risk on participants. This corresponds with questionnaire results in which musculoskeletal symptoms were mostly prevalent in the neck, the shoulder, the low back, the wrists/hands and the upper back regions. Poor psychosocial complaints were also made on the job. There was no significant correlation (p < .05) between musculoskeletal symptoms and age, working hours and length of service. Neither was any significant correlation observed (p < .05) between psychosocial work factors and musculoskeletal symptoms. Recommendations such as task redesign to eliminate high-risk elements in operations, workplace changes and worker training were suggested.

This study investigated musculoskeletal symptoms among fish trimmers (skinners and polishers) in a fish processing factory in Ghana. The methods used included administration of questionnaire, walk through observation, interview, task analysis and future workshop. All 50 female participants answered and submitted their questionnaires. Of the 11 operations performed by skinners only 1 was rated as low risk. Also of the 12 operations performed by polishers only 2 were rated as low risk. Neck side bending, neck flexion, prolonged standing, shoulder elevation, abducted arms, repetitious reaching forward and wrist deviation were observed in most operations. This corresponds with questionnaire results in which musculoskeletal symptoms were mostly prevalent in the neck, the shoulder, the low back, the wrist/hand and the knee regions. There was no significant correlation (p < .05) between musculoskeletal symptoms and age, working hours and length of service. Task redesign, workplace changes and worker training were suggested to improve the work.

Pomimo zmniejszających się połowów własnych, polski przemysł przetwórstwa rybnego rozwija się dynamicznie. Przeciętny Polak corocznie zjada ok. 12-13 kg ryb, a są to głównie śledzie, makrele, ryby dorszowate. Bli-sko 400 polskich producentów dostarcza rocznie 300 tys. t produktów. Polska jest eksporterem netto przetworów rybnych, import ogranicza się głównie do surowców. Jakość zdrowotna produktów rybnych, badana przez państwową kontrolę, budzi szereg zastrzeżeń, choć w ostatnich latach stan sanitarny przetworów nie uległ pogorszeniu.

In spite of the decrease in fishing capacity Polish processing industry is undergoing a dynamic development. The average consumption of fish in Poland is 12-13 kg/caput among those mainly herring, mackerel and different white fish. Almost 400 Polish producers supply 300 000 t of fish products annually. Poland is a net exporter of fish products, import is basically narrowed down to fish resources. The wholesomeness of fish products determined by National Supervisor is often questionable, although, in the last few years, the sanitary quality of fish products has not been deteriorating.
