W przypadku dostaw świeżych produktów spożywczych na rynek trwa nieprzerwany wyścig z czasem. W tym przypadku czas decyduje o jakości produktów. Wybieramy takie procesy przetwórcze [6], sposoby transportu i przechowywania produktów, które gwarantują spowolnienie procesów metabolicznych i innych zachodzących w produktach. Celem tego artykułu jest przedstawienie różnych możliwości realizacji tych procesów oraz ich zależności od warunków w jakich zachodzą.

In this article problems are explained related to fresh product supply chain. After possessing the resource, it starts to ripen because of the metabolic process. That is applied to fresh vegetables or fruits but also to processed products like: juices or dairy products etc. It is time that is decisive what concerns freshness of the product and its quality. In the last stage of production it has the best quality. Since that moment, quality of the product starts to lower with time. If we want to maintain a high quality of the product, we have to slow down the metabolic process of the product but, on the other hand, we must reduce the time of transport, storing and distribution. Time in this case is of a dual character.
