Poznanie czynników warunkujących jakość sensoryczną i wartość odżywczą mięsa wołowego może przyczynić się do otrzymania produktu o wysokich walorach smakowych i odżywczych oraz umożliwić promowanie jego specyficznych właściwości. Celem niniejszego artykułu jest przedstawienie wpływu czynników przedubojowych na wartość odżywczą i jakość sensoryczną mięsa wołowego. Dane literaturowe wskazują, że jakość sensoryczna i wartość odżywcza mięsa uwarunkowane są szeregiem czynników przyżyciowych takich jak rasa, sposób żywienia, wiek w momencie uboju, status hormonalny, czy rozmieszczenie mięśni w tuszy zwierzęcia. Czynniki te wywierają duży wpływ na jakość mięsa wołowego. Krzyżowanie towarowe zwierząt ras mlecznych i mięsnych oraz kastracja osobników męskich pozwala uzyskać mięso o znacznie wyższej jakości sensorycznej od mięsa pozyskanego od niekastrowanego bydła mlecznego. Właściwie zaplanowany sposób żywienia zwierząt, podawanie pasz o wysokiej wartości odżywczej wpływa zarówno na jakość sensoryczną, jak i wartość odżywczą mięsa.

Understanding the determinants of sensory quality and nutritional value of beef can help to obtain a product with good taste and high content of nutrients and allow to promote its specific characteristics. The purpose of this article is to present the impact of ante-mortem factors on nutritional value and sensory quality of beef. Literature data indicate that the sensory quality and nutritional value of meat are influenced by a number of factors such as race, diet, age at slaughter, hormonal status, or distribution of the muscles in the animal body. These factors have a major impact on the quality of beef. Commodity crossbreeding of dairy and meat breeds animals and castration of males allows to obtain much higher sensory quality of meat than from uncastrated dairy cattle animals. Properly planned diet of animals, supply the feed with high nutritional value affects both the sensory quality and nutritional value of meat.
