Tworzenie się osadów w zakładach przetwórstwa mleka jest główną przyczyną postępującego spadku wydajności i efektywności produkcji. Osady mlekowe obniżają wydajność cieplną gdyż ograniczają zarówno przekazywanie ciepła jak i przepływ płynu. W artykule przeprowadzono analizę czynników biorących udział w procesie tworzenia się osadów mlekowych pod wpływem obróbki termicznej w wymiennikach ciepła. Scharakteryzowano powstające osady, opisano ich skład oraz mechanizm postawania na gorących powierzchniach aparatów.

Deposit formation in milk processing plants is the main cause of a progressive decline in their efficiency and performance. Milk deposits are poor thermal conductors and restrict both heat transfer and fluid flow. In the work, factors involved in process of milk deposit formation, as influenced by heat treatment in heat exchangers were discussed. The formed deposit was characterized and their composition and mechanism of formation on hot surfaces devices was described.
