Emulsje typu olej w wodzie to bardzo dynamicznie rozwijająca się grupa produktów spożywczych przeznaczonych bezpośrednio do spożycia lub stosowanych w procesie wytwarzania struktur układów bardziej złożonych. Do ich produkcji używa się obecnie, w coraz szerszym zakresie, emulgatory i zagęstniki nowej generacji o specyficznych właściwościach technologicznych i prozdrowotnych, a także pozwalających na uzyskanie znacznej poprawy stabilności dyspersji.

The oil-in-water emulsions belong to the very dynamic developing food products intended for direct consumption or application in manufacture of more complex structures. Currently, in their production, we employ emulsifiers and thickeners of new generation, which exhibit specific technological and functional properties as well as allow obtaining considerable improvement of the dispersion stability.
