Abstrakty
Grzyby nitkowate Monascus purpureus mogą stanowić wartościowe źródło naturalnych barwników spożywczych. Przeprowadzono hodowle Monascus purpureus DSM 1379 w kolbach okrągło dennych wstrząsanych w płynnym podłożu. Badano wpływ różnych czynników, takich jak: źródło węgla i azotu oraz pH na wzrost i biosyntezę barwników.
Filamentous fungus Monascus purpureus is a promising source of the natural food colorants. Monascus purpureus DSM 1379 was cultivated in liquid medium in shake flask culture. Effect of different process variables such as carbon, nitrogen source, pH on growth and pigments production was investigated.
