Aim of this work was the investigation of selected physical proprieties of model soy-drink powder, taking into account type and quantities of lecithin added during agglomeration. The model soy-drink powder was made of soy protein and whey powder (in proportion 1:3). The agglomeration was carried out in mechanical and fluidized-bed aglomerators. During this process aqueous lecithin dispersion was sprayed onto the agglomerated powder. Analysis of physical proprieties included: size distribution, loose and tapped bulk density, flowability, wettability and hygro-scopicity. Both the fluidized-bed and mechanical agglomeration of soy-drink powder did indeed change their distribution and physical proprieties. The best results were achieved for Emulpur and Metarin lecithins (dosage 1.5% relative to final product). These agglomerates showed the properties of quick wettability in water and good flowability.
