Trichoteceny są jedną z grup mikotoksyn - wtórnych metabolitów grzybów pleśniowych. Stanowią one zanieczyszczenia żywności i pasz. Mikotoksyny wpływają niekorzystnie na zdrowie człowieka i zwierząt. Najwyższe dopuszczalne stężenia wybranych związków re gulują przepisy Unii Europejskiej. W analizie trichotecen najczęściej stosowane są metody chromatograficzne (GC. HPLC), W ostatnich latach nastąpił wzrost popularności spektrometrii mas jako metody detekcji, W pracy tej przedstawiono charakterystykę trichotecen grup A i B oraz chromatograficzne metody analizy.

Trichothecenes are one of the mycotoxins group - the secondary metabolites of anamorphic fungi, They belong to food- and feedstuffs contaminants. Mycotoxins are capable of causing various adverse health effects in humans and animals. The maximum acceptable levels in foodstuffs for many of them as well as analysis requirements are regulated by the European Union. Chromatographic methods (GC, HPLC) are one of the most frequently applied to trichothecenes determination. Application of mass spectrometry (as a method of detection) has become very popular in recent years. This paper is focused on trichothecenes properties and methods of their analysis, including gas and liquid chromatography with different types of detection.
