Abstrakty
Artykuł obejmuje przegląd piśmiennictwa dotyczący inteligentnych i aktywnych opakowań przeznaczonych dla przemysłu spożywczego. Podano definicje, typy i sposób działania obu grup opakowań. Przedstawiono najnowsze tendencje w zakresie otrzymywania różnych folii (z tworzyw sztucznych, biopolimerów oraz jadalnych i biodegradowalnych folii wykonanych z białka, polisacharydów i lipidów) z substancjami przeciwdrobnoustrojowymi. Zaprezentowano wyniki badań modelo1rych odnoszących się do działania aktywnych folii na czyste kultury chorobotwórczych bakterii i bakterii powodujących psucie się żywności oraz na mikroflorę i chorobotwórcze bakterie występujące na powierzchni surowego mięsa i produktów mięsnych.
This is a review paper on intelligent and active food packaging. Definitions, types and mode of action of both groups of packaging are presented. New trends regarding production of different kinds of films (polymeric, biopolymeric, edible and biodegradable made from protein, polysaccharides and lipids) with antimicrobial substances are described. Results of experiments on the activity of above mentioned films on the culture of pathogenic and spoilage bacteria as well as on microflora and pathogenic bacteria existing on the surface of fresh meat and meat products are shown.
