The basis for determining a safe process for thermally processed foods has not changed in over 90 years. Thermal processes are performed under control in most cases but validation of those processes is still a problem for some organizations. Law regulations require commercial sterility of thermally processed products or food safety. Except FDA regulations there are no clear law demands for thermal process validation. ISO standards (for example ISO 22000:2005, pkt. 8.2) require validation of processes and records from validation. Thermal process validation covers heat penetration (HP) tests and heat distribution (HD) tests. Procedures for those tests are published by Institute for Thermal Process Specialists (IFTPS) and they are recognized by most authorities. HD and HP tests shall be done for every product and for every retort by Process Authority. Process Authority shall also determine critical factors which have to be controlled and recorded by Operator during process realization. In addition inoculated pack tests can be done as a biological validation of process which allows evaluating whole food production process. Operator shall have complex knowledge about process and product to produce safe food. HP and HD tests can be done for other thermal process in food processing like smoking, cooking or thawing. Also those tests can be done as a part of sterilization process validation for medical devices (requirement of ISO 13485:2003 standard).
