Oils obtained from the seeds of eleven Boraginaceae species (Anchusa officinalis L., Borago officinalis L., Cerinthe minor L., Cerinthe glabra L., Cynoglossum amabile L., Cynoglossum officinale L., Cynoglossum hunga-ricum Simonkai, Echium vulgare L., Lappula deflexa Mnch., Lithospermum officinale L., and Omphalodes linifolia Mnch.) have been analysed to determine their oil content and their physicochemical constants (relative densities (d20), refractive indices (nD20), iodine number (IN), and acid number (AN)). GLC was used for identification and quantification of the fatty acids after methylation with BF3 in methanol. Seeds of Borago officinalis and Echium vulgare yielded the largest quantities of oil (28.3 and 34.7%, respectively). Two other species, Anchusa officinalis (21.6%) and Cerinthe glabra (22.7%), also yielded large amounts of oil. The oil content of Lappula deflexa and Lithospermum officinale seeds was low (16.4 and 15.6% respectively). Four of the oils, those from Lithospermum officinale (80.94%), Echium vulgare (80.27%), Cerinthe glabra (76.84%), and Cerinthe minor (77.08%), contained large quantities of high essential fatty acids (EFA). Small amounts of EFA were present in the seeds of Cynoglossum hungaricum (38.87%) and Omphalodes linifolia (32.88%). The EFA fraction of all the oils contained g-linolenic acid and stearidonic acid (very unusual in plants). This might be very valuable for the future chemotaxonomic research on the Boraginaceae family.
