W pracy zbadano wpływ stopnia dojrzałości mięsa wołowego na ilość heterocyklicznych amin aromatycznych (HAA) powstających podczas różnego rodzaju wysokotemperaturowej obróbki termicznej (pieczenia, smażenia i grillowania). Do badań wykorzystano mięśnie tuszy wołowej: lędźwiowy większy - polędwicę (psoas major) oraz pośladkowy średni – rostbef (gluteus medius), które dojrzewały w różnym czasie (5, 10 i 15 dni). Przeprowadzono analizę chromatograficzną próbek. Najwięcej HAA (10,01 ng/g mięsa) stwierdzono w mięśniu gluteus medius. Wydłużenie czasu dojrzewania mięsa wołowego powodowało zwiększenie ilości powstających HAA. Spośród badanych procesów termicznych najwięcej HAA (9,37 ng/g) powstawało podczas grillowania. Najczęściej występującą aminą w mięsie poddanym obróbce termicznej była PhIP (nawet ponad 400 ng/g mięsa). W mięsie grillowanym nie stwierdzono aminoimidazoarenów (IQ oraz IQx), które ze względu na wysoką wrażliwość na działanie wysokiej temperatury, rozkładały się podczas procesu termicznego.

The aim of the study was to investigate heterocyclic aromatic amines (HAA) content in heat –treated beef (frying and grilling) depending on the type of beef muscle and their aging. In the study, two different beef muscles were used: lumbar higher (psoas major) and middle gluteal (gluteus medius), aging process was carried out in different periods of time (5, 10 and 15 days). Chromatographic analysis of heat treated beef samples was performed. The most of HAA (10.01 ng/g ) was found in the gluteus medius muscle. During aging process the amount of HAA in meat in creased. Among the studied thermal processes the most HAA (9.37 ng/g) was formed during grilling process. The PhIP was formed in the largest quantities (more than 400 ng/g of) with comparison to other heterocyclic aromatic amines found in studied samples. Aminoimidazoarenes (IQ and IQx) were not found in grilled beef meats, probably there were thermally decomposition during heat treatment.
